I'm in charge of the next morning meeting refreshments in my office and while I like them - Krispy Kreme just won't do! Do any of you have any favs on the lighter side for a breakfast treat. TIA!

The cranberry hazelnut coffee cake and Jamaican banana bread are excellent. These are also good...

Mini Cinnamon Swirls

Amount Measure Ingredient -- Preparation Method

1 (8 count) can reduced fat refrigerated crescent rolls
2 Tablespoons butter or margarine -- softened
2 Tablespoons sugar
1 teaspoon cinnamon
Glaze:
1/2 cup powdered sugar
1 Tablespoon milk
1/4 teaspoon vanilla extract
Separate dough into 2 rectangles. Press seams together. Spread with butter; sprinkle with mixture of sugar and cinnamon. Roll up from narrow end to enclose filling; press edges to seal.
Cut each roll into 6 slices. Place in muffin cups sprayed with nonstick cooking spray. Bake at 375 degrees for 10 to 15 minutes or until golden brown. Remove to wire rack.
For glaze, combine all ingredients in bowl and mix until smooth. Drizzle over warm rolls.

Low Fat Lemon-Poppy Seed Muffins

2 cups all-purpose flour
1/2 cup sugar
2 tablespoons poppy seeds
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
3 tablespoons vegetable oil
1 teaspoon grated lemon rind
2 tablespoons fresh lemon juice
8 ounces lemon low-fat or fat-free yogurt
1 large egg -- lightly beaten
1 cup blueberries
Glaze:
powdered sugar
fresh lemon juice
Preheat oven to 400 degrees. Combine first 6 ingredients in a medium bowl; make a well in center of mixture.
Combine oil, rind, juice, yogurt, and egg; stir well. Add to dry ingredients, stirring just until moist.
Lightly fold in blueberries.
Spoon batter into each of 12 muffin cups coated with cooking spray. Bake at 400 degrees for 14 minutes or until golden.
Poke holes on top of muffins with a toothpick. (optional)
Make a glaze of powdered sugar and lemon juice and pour over the top of each muffin.
Remove muffins from pan immediately; place on a wire rack.
CALORIES without blueberries and glaze: 179 (25% from fat); FAT 4.9g

I've brought in the Cranberry hazelnut coffeecake to work and it was a big hit.
I've also brought in the cranberry-choc. chip biscotti--which was good.
Also, the lemon biscotti which was fabulous.
I also have a very non light recipe for blueberry bars which was another big hit.
I've also brought in the triple fruit scones and everybody loved them as well.
Can you tell that I feed my coworkers constantly? They enable me to make the huge batches of desserts and other pastries that I can't resist making, but hate to have lying around the house waiting for me to finish them off.
Kristi--who remembers the debacle at my house when I made the lemon swirled cheesecake and I'm the only one who likes cheesecake!

MY POINT EXACTLY - I'm so glad there are others out there. I'm not satisfied til it's gone.
Heeter, Great question! My office's staff meeting is always loaded with fattening treats and it's so hard for me to stay away from them especially because our meetings last forever! So, I am having the same dilemma as you! I am thinking of taking the Huckleberry Cake that's in 5-Star Cookbook or one of the pumpkin breads, but I'd really like to fake my coworkers off with something they won't know is healthy. I've thought of trying the Cinnamon Roll Bread or the Citrus Cream Cheese Pull Apart Rolls, but I'd love some suggestions that are easy to make and take with me.

Muffins are usually a great bet around here -- I usually make a mixture of full and low-fat muffins to take with me to meetings. Most of the time, my colleagues can't tell the difference between the two!
The Jamaican Banana bread recipe makes great muffins -- and really makes a brilliant presentation when covered with the coconut topping!

The June or July 2000 CL had a fantastic Blueberry Almond Coffeecake recipe. It is out of this world!
