View Full Version : Can anyone help me use a somewhat strange leftover?

My husband tried to make tofu burgers the other day for his dinner using a tofu burger mix I bought made by Fantastik. Well, it was more of a tofu crumble. We have some leftover and I'd like to use it up but I'm a bit at a loss to determine what to make out of it. I smelled it and it smells just like hummus so I'm guessing it has chickpeas in it. I was thinking I might be able to sprinkle it over something casserole-like. This board is so full of creative cooks I was hoping someone might be able to come up with something yummy. I have to go to the store anyway so there really aren't any limits to anything else that could be in the casserole--I'll just pick up stuff at the store. Any brainstorms?

maybe something like a tofu hamburger helper???
or throw it in pasta with some sort of sauce???

You might be able to add mayonase or dressing, to make a sandwich spread. You might try adding an egg to make patties? Even a cream canned soup and cheese to make a cassarole of sorts?

I made this a while back with crumbled tofu. Both my husband and I thought it was fantastic. (from Epicurious)
SOUTHWESTERN TOFU WRAPS
4 tablespoons fresh lime juice
1 tablespoon vegetable oil
8 ounces firm tofu, drained, patted dry, crumbled
1/2 cup chopped red onion
1/3 cup chopped fresh cilantro
1 garlic clove, minced
4 7- to 8-inch-diameter flour tortillas
2 cups thinly sliced lettuce leaves
1 cup spicy tomato salsa
Whisk 3 tablespoons lime juice and oil in medium bowl. Add tofu, onion, cilantro and garlic and toss to blend. Season to taste with salt and pepper. Let marinate 20 minutes.
Preheat oven to 350°F. Wrap tortillas in foil. Place in oven until heated through, about 10 minutes. Meanwhile, toss lettuce with 1 tablespoon lime juice in small bowl.
Place 1 tortilla on each of 4 plates. Place layer of lettuce down center of each tortilla. Top with tofu mixture, dividing equally. Spoon 1 1/2 tablespoons salsa over each. Roll up tortillas. Serve, passing remaining salsa separately.
Per serving: calories, 205; total fat, 8 g; saturated fat, 1 g; cholesterol, 0

Thanks everyone! I made tuna noodle casserole and used the tofu crumble on top. It was so-so. Wish I had seen the Southwester Tofu Wraps recipe sooner--that looks great! Thanks DMOrtega!
How about a sloppy joe type thing? I put carrots and celery in sometime to up the veggies.
