View Full Version : Can somebody please post this recipe from Southern Living?

I was sitting in my dentist's office earlier this week reading Southern Living and there was a recipe I wanted to copy before my cleaning, but I didn't have time (my appointment was actually on time for once). Anyway, if you have this month's Southern Living (I think it was this month's issue), can you please post the recipe for Orphan's Rice? I think the recipe is closer to the back of the magazine that the front. I just made the Fried Rice with Ham recipe from Everyday Food (October, 2004) for dinner tonight and I wanted to compare the two recipes and see which one I like better.

Please share the recipe with me if you have it. I'd really appreciate it. Thanks so much in advance.

Orphan's Rice

Prep: 10 min., Cook: 30 min., Stand: 10 min.


1 tablespoon butter
3/4 cup pecan halves
1/2 cup slivered almonds
1/3 cup pine nuts
1/2 small onion, minced
1 garlic clove, minced
2 tablespoons vegetable oil
1 (10-ounce) package yellow rice
3 cups low-sodium chicken broth
2 bacon slices, cooked and crumbled
1/4 cup finely chopped cooked ham
1 tablespoon minced fresh parsley

Melt butter in a skillet over medium heat. Add 3/4 cup pecan halves, 1/2 cup slivered almonds, and 1/3 cup pine nuts, and cook, stirring often, 3 minutes or until almonds are light golden brown. Set aside.
Sauté minced onion and garlic in hot vegetable oil in a saucepan over medium-high heat 5 minutes or until onion is tender. Add yellow rice, and sauté, stirring constantly, 1 minute. Add chicken broth, cover, and cook 18 minutes. Remove saucepan from heat.

Stir in nuts, crumbled bacon, chopped ham, and fresh parsley. Cover and let stand 10 minutes. Serve immediately.

Yield: Makes 6 to 8 servings

Thank you so very much for posting this. I can't wait to try it. I am looking for simple rice dishes to throw together during the work week and this pretty much fits the bill. (I have more rice in my pantry of every shade...white, brown, yellow...than I care to admit.) I'll post a review after I try it.

I plan to try it sometime next week (or at least that is the plan for now). I think I am going to lessen the amount of pecans and pine nuts, though. Not really sure yet, but it just seems like a lot of nuts to me. Maybe once the rice cooks up, though, it won't seem like as many. I'll let you know.
