In the recipe for Cider Scalloped potatoes it calls for Yukon spuds, can you use regular baking potatoes instead without altering the taste???

Yukon Golds are starchier potatoes and therefore hold up better in a recipe like this. I would not make this substitution because baking potatoes are likely to fall apart.
