View Full Version : Cleaning out the fridge/tonight's dinner

I wanted to ask for suggestions for dinner tonight. I have some fresh asparagus that is going to be our main ingredient. I would like for it to be a pasta dish. I am using WW spaghetti. I also have feta, parmesean, shredded colby jack cheese. Can tomatoes, fresh grape tomatoes, assortment of veggies (peppers, carrots, onions...)

Any ideas? Also, I have pine nuts in the fridge. Anyone have an idea on the shelve life for them?

Sounds like my dinner last night! I sauteed some garlic in olive oil, then added fresh tomatoes, some cheese, green peppers, onions, and eggplant. I did have asparagus, but I'm saving that to make soup. Almost threw some in, though! I let all the ingredients simmer so that the tomatoes make a nice sauce. I do this alot in the summer with all the fresh vegetables. Oh, and don't forget the fresh basil!! Then I just toss it all with pasta.
