I just got this out of the oven and tasted it. While not a "wow" kind of dish, it is "mighty tasty".

I followed the recipe exactly, and it really didn't take any time at all. I baked the fish while cooking summer squash on top of the stove and microwaving a sweet potato.

This is going to make a great meal; and there's enough left over to take to work this week!

Here's the recipe:

Salmon with Orange Marmalade

Ingredients:

1/4 c. orange marmalade
2 T. low-sodium soy sauce
2 garlic cloves, minced(i used minced garlic in the jar)
1(1 1/2 lb.)salmon fillet
1/4 tsp. salt

Directions:

1. Preheat oven to 400°.

2. Combine first 3 ingredients, stirring with a whisk. Place salmon
on rack of a broiler pan lined with foil; sprinkle fish evenly with
salt. Spread half of marmalade mixture over fish. Bake for 18 minutes
or until fish flakes easily when tested with a fork. Remove from oven.
Spread remaining marmalade mixture evenly over fish.

3. Preheat broiler.

4. Broil fish 3 minutes or until topping browns.

Yield: 4 servings

The only thing i added to this was spraying the pan and then the foil with cooking spray. I also didn't raise the oven rack to broil the fish at the end; i think the marmalade would have burned if i had.

Thanks for posting a review, this is one I had marked to try. Always looking for different (and easy) recipes for salmon.

I made salmon tonight and I couldn't remember which recipe I had wanted to try. This was it! I'll have to try it next time. Thanks for the review.

We thought this was WOW. But, then, I grilled it (surprise!) rather than using the oven. It also smelled incredible, no doubt from the smoke.

I coated the salmon with the marmalade mixture, then grilled skin side down over direct heat for 20 minutes with the cover on the grill. I've done salmon like this on the grill before with other mixtures/pastes, so I knew what to expect.

Served it with the Persimmon-Walnut Oil Salad on page 188. Only I used canola oil mixed with toasted walnuts rather than walnut oil. Also very good!

We had the Persimmon-Walnut Oil Salad last night. It was our first experience with persimmons. The salad was very good and I guess we like the persimmons alright, but they were not outstanding. I did find Fuyu persimmons and they were ripe, I guess I just expected something different.

I made this yesterday, my first experience w/ orange marmalade, I honestly didn't like that there was orange peel in it, go figure! Next time I will try with just regular orange jam. I served it w/ tomatillo brown rice and steamed squash. It was pretty good!

I made this last night and it was very tasty, a repeat for a quick weeknight dinner, Except I used apricot preserves instead. I had those packs of orange marmalade you get at restuarants and they smelled funny I looked at the expiration date, it was 1/02!! so I dumped that and apricot it was, as you can tell I rarely use orange marmalade so I will stick with apricot preserves, And i grilled the salmon too.
