Forgot to say: this is an April '01 recipe, page 127
This was just like having really great Thai take-out, only better because it was homemade and I knew exactly what went into it!
I used whole wheat pasta; couldn't find chile *paste*, but Safeway had chile sauce with garlic in the Asian foods section; chicken instead of tofu; broccoli after I became exasperated grating baby carrots.
Can't wait to make it again and experiment- I'd like to try it with rice for a super potluck dish; add some toasted almonds, perhaps, go crazy with the veggies. Man, I love peanut butter.
It was a tricky to pair wine with this- so much going on between the pb and the spices, but a young Australian Shiraz (1998 Jacob's Creek- found it at Safeway) has really ripe, juicy berries that smoothed the bite of the chile and ginger and stood up well against the sweetness of the pb.
Had only salad as an accompaniment- this is a pretty filling dish.
A little Shiraz in the glass, Cesaria Evora on the stereo, fusion-Thai on the dinner table- just felt so cosmopolitan http://www.cookinglight.com/bbs/smile.gif
