I just wanted to know if anyone had any good recipes for their crockpot, they need to be low fat or fat free and I eat alot of chicken so those would be appreciated. I lost 140 pounds and 89 inches off my body awhile ago and since then have gained almost all back and I need to get focused and motivated again so I thought I would try here for some great low fat recipes for my regimen.

We talk about crockpots a lot around here! What you want to do is search. I looked up "Crockpot" as a title word on the food board, and here (http://community.cookinglight.com/search.php?s=&action=showresults&searchid=571185&sortby=lastpost&sortorder=descending) were my results.

They're not all low fat, but at least it give you a starting point.

Here's the link to a thread where I asked for healthy and easy crockpot recipes. Great ideas on here, my favorite of which are the Thai Chicken, the lasagna and the chicken tortilla soup (not to be confused with the popular non-crockpot Tortilla soup). Welcome to the boards!

Welcome, Sandy! :) You might also search for "slow cooker" since the names seem to be interchangeable.

That Slow Cooker Thai Chicken is really delicious and easy. Pretty low fat, given peanut butter is the only fat and, hey, that's a GOOD fat! Welcome to the boards! :D

I don't have the recipe handy, but our favorite slow-cooker recipe is for sticky chicken that I found on one of the other threads.....maybe somebbody else can post it or I can post it tomorrow.

This one is a regular in my house! DBF and I use it alot, and use the chicken throughout the week.

One thing that I do, is ball up some aluminum foil (probably 5 or 6 balls) and put that in the bottom of the crockpot. That way the chicken isn't sitting in the juice.

Sticky Chicken Recipe

4 teaspoons salt
2 teaspoons paprika
1 teaspoon cayenne pepper
1 teaspoon onion powder
1 teaspoon thyme
1 teaspoon white pepper
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1 large roasting chicken
1 cup chopped onion

In a small bowl, thoroughly combine all the spices. Remove giblets from chicken, clean the cavity well and pat dry with paper towels. Rub the spice mixture into the chicken, both inside and out, making sure it is evenly distributed and down deep into the skin. Place in a resealable plastic bag, seal and refrigerate overnight.

OVEN BAKING INSTRUCTIONS When ready to roast chicken, stuff cavity with onions, and place in a shallow baking pan. Roast, uncovered, at 250F degrees for 5 hours. After the first hour, baste chicken occasionally (every half hour or so) with pan juices. The pan juices will start to caramelize on the bottom of pan and the chicken will turn golden brown. If the chicken contains a pop-up thermometer, ignore it. Let chicken rest about 10 minutes before carving.

CROCK POT INSTRUCTIONS Stuff the chicken with the onions; place in the crockpot and set to Low all day long. You can make gravy from the juices if you want.

Thank you everyone for the warm welcome. I had lost 140 pounds and 89 inches off my body and since then have gained almost all back so I am trying to stay on program and get what I gained off and man its hard. I eat alot of chicken so if anybody has any chicken recipes in general that are lower in fat please feel free to send them, I eat chicken about 5 days a week so I am always looking for new recipes.
I am going to try the sticky chicken, looks and sounds good.

Sandy, I don't have a recipe to share, buy I wanted to mention this cookbook that I really like. It is called The Best Kept Secrets of Healthy Cooking by Sandra Woodruff, R.D. All of the recipes in there are very low fat and delicious, too. I turn to This book when I need to cut back on the fat and calories. Easy to prepare and the ingredients are what you would have in your cupboard. Last night I made chicken paprika and the other night I made a lemon pasta with chicken. Just wanted to share one of my favorite books.

Fix It and Forget It has a new low fat book out too. I think I got a flyer for it with my last issue of Light and Tasty.
