View Full Version : Green Salad with Roasted Poblano and Cumin Lime Dressing-10/04

This was such a simple salad, but the taste was fantastic. It was a little time consuming, with having to roast and peel and slice the peppers, but that could be done any time and refrigerated. The dressing was a snap to make and very good, for so few ingredients. I will have to add that I doubled the dressing:eek: There just have been too many times when I thought there wasn't enough dressing in CL recipes, so if I am in doubt-I double.

This was delicious! I noticed halfway through making it that the salad was supposed to serve 6 - and there were only 2 of us - fortunately, Terry is right - there wouldn't have been nearly enough dressing for 6. We added fresh veggies to the salad greens - used romaine and added a red pepper, julienned carrots, scallions, and some red onion - which I'd do again. Served it with the White Chicken Chili, also from the October issue. Delicious and a definite repeater for us!

I made this today for a potluck get together without reading a review, and the "voices in my head" kept saying double the dressing but I didn't. It was still very good anyway and I added the juice that the poblanos exude when roasted. I felt that it couldn't hurt. NewMrsG, I like your idea of adding the veggies. With all of the chili, fried turkey, store bought potato salad and coleslaw, etc. this was good and healthy.
