Greetings. This is my first post and I do hope someone can help me find what I am looking for.
I have recently moved and have misplaced some of my C.L. issues. Its been cold and wet hear lately, and I was looking forward to making some of the hearty soups/stews that were featured in one of the last couple of issues. Can any one help me with which issue it was or if the recipes are online?
Thank you so much in advance for any help. Nothing beats a hearty stew on a cold, dank night!!

Have you tried the recipe search (category soup/stews? I believe the issue that had many soups and stews in 2001 was Jan/Feb 2001 It had King Edward Soup, Roasted chicken with wild rice soup, Spicy chicken and pumpkin stew, Tortilla soup, Chicken & banana stew, Albondigas Soup & chicken noodle soup. Let us know which one you are interested in...

Welcome purplefishy! There was a thread a while back where everyone explained their user name. Do you care to share? I'm from Richmond but I'm not sure where Sterling is. Is that northern Virginia?
As for your soup craving, I just made some soup that was a lot like brunswick stew, but I substituted young soybeans for the butterbeans and I added green beans as well. It had lots of chicken, red potatoes, carrots, celery, vidalia onion and also crookneck squash. (I have a hard time calling it that as I was raised calling it yellow squash or summer squash. In fact, I don't think I new it was called crookneck until I was looking up the calorie content!) Anyway, I'd be glad to share it if it sounds tasty to you.:)

This is a recipe from Jewel that I have been meaning to try. Lots of raves reviews for this one.

Title: Jewel's Cheesy Chicken Chowder
Categories: To Try
Yield: Servings
5 c Chicken Broth
4 c diced potatoes
2 c diced celery
2 c diced carrots
2 c diced onion
1/3 c butter or margarine
1/3 c all purpose flour
3 c skim or 1% milk
3 T low-sodium soy sauce
2 c chopped,cooked chicken
1 t crushed red pepper,ground fine
1/4 t cayenne
1 lb Light Velveeta,cubed (half of loaf)
Fresh chives (optional)
1) In a large stock pot combine chicken broth, potatoes, celery,
carrots and onion Cover and bring to a slow boil for 15 minutes, or
until the vegetables are tender.
2) In a medium sauce pan over low heat, melt butter, add flour, and whisk until smooth. Let simmer for one minute, then increase heat to medium. Stir mixture constantly while gradually adding milk. Continue to stir until thick and bubbly.
3) Add milk mixture to vegetables. Add soy sauce, crushed red pepper, and cayenne. Gently stir in cheese, and continue to stir until completely melted. Add chicken, heat thoroughly, and serve garnished with fresh chives.

This recipe came from an old WW cookbook...I can't remember the measurements, but it is soup...measure to taste!
Beef Barley Soup
Lean fajita meat/steak
1 cup barley
1 can stewed tomotoes
1green pepper
1onion
2 carrots
2 garlic cloves
add some water w/ some beef boulin cubes for flavor...
sorry I can't remember specifics, but I think CL has a similar recipe, so you could search for that...

clairea, my DH and I are trying to lose a few pounds and also eat more fruits and vegetables and we both love soup. So I wanted lots of "fillers" in this soup without a lot of calories. It's really more of a stew than a soup.
3 large chicken breasts
3 bay leaves
Large Onion
2 stalks of celery
2 cups sliced carrots
1 large vidalia onion
3/4 cup sliced celery
3 cups chopped red potatoes
1 bag (about 1-1/2 cups) of frozen soybeans or baby limas
1-1/2 cups green beans (I used organic canned but you may prefer fresh)
2 cups fresh or frozen corn
1 large can diced tomatoes
1/4 cup ketchup
4 cups diced crookneck squash
1 tbsp. olive oil
1 tbsp. sugar
1 tbsp. dried thyme
2 tbsp. dried parsley
4 cloves garlic, crushed or minced
Water to cover
Boil gently the chicken breasts with the next 3 ingredients until the chicken is done and tender, about 45 minutes. Remove the chicken and refrigerate. Discard the solids in the broth and refrigerate the broth. (I do this the night before but of course you could do it early in day too.)
After the broth is chilled, skim off and discard the fat and pour the broth into a large pot. Remove the skin and bones from the chicken and crumble the meat into the pot. Add the carrots, celery, onion, garlic, olive oil and remaining spices and let simmer until vegetables are nearly done. Add tomatoes, corn, beans, ketchup and sugar, and let simmer for about an hour. Add the squash about an hour before serving. Add water as needed.
You might prefer to use fresh herbs, I often do.
I don't use a lot of water and this quantity made 16, 1-1/2 cup servings at 200 calories per serving. It freezes well and is even better leftover.
I served this to friends the other night with a bowl of watermelon, warm crusty bread and slices of hot pepper cheese.:) Let me know if you make it and if you like it!

Thanks Julie! I am definitely going to try that soon. I am trying to lose the last few baby pounds, so filling, low calorie dishes are certainly welcome.
