Zucchini casserole with Red Pepper Aioli Delicious. The Aioli really makes the dish. Very big portion size and very filling. We had it with just a side salad. My husband really loved it. He gave it a 9.5 out of 10.

Chicken Fillets with Peppers Another winner with my husband and I-an 8 out of 10. I substituted capers for olives. DH hates olives, and I happened to have capers in the fridge. I served it over the lemon pepper linguine with the foccacia garlic bread from March(also good). DH thought the linguine was too peppery(he's not a big pepper fan). I liked the pepperiness though.

Cauliflower Spinach Curry with Olga's Flatbread-these were recipes from the BB. THANK YOU to the posters. Wonderful curry, and great with the bread. I served it over long grain brown rice with the bread. I used lite coconut milk instead of the evaporated milk and honey. And I used whole spices ground up in the coffe grinder(not ever used for coffee!).

Kahlua Cinnamon Brownies Not too dry brownie with a little different twist. I would make them again, but I have also had better light brownies in the past. This is from the Complete cookbook.

Apple Buttermilk coffeecake Just made it for breakfast for the morning so this one I'll let you know about tomorrow, but it baked very nicely, and smelled wonderful.

Pasta Primavera This was a recipe from last spring. I don't recall the month, but the article featured spring peas. It has fresh peas, zucchini, green onions, and asparagus in it. This a wonderful nice light spring pasta dish(now only if the snow would melt here!). I always add garlic to this dish(even though the recipe does not call for it-How absurd!!). I made homemade basil fettuccine to go with it with some of the basil left over from the primavera.

karen w--thanks for those reviews! I have the zucchini casserole and olga's flatbread on my list to make soon.

Do you think the flat bread would be good for a veggie wrap-type of thing? I'm craving a veggie wrap with goat cheese for some reason. Thanks.

Beth H,
I think the flatbread would work for a veggie sandwich. It is similar to the Greek breads served with shaved lamb(Gyros) or pitas, but there is no pocket. I'd just fold it in half for a sandwich.

And by the way, the Buttermilk coffeecake I promised I'd get back about is wonderful! A definite repeater.

Thanks for all the reviews. I'll second the review about the buttermilk apple coffeecake. we loved it- just the right amount of sweetness and spice.
