This was a good quick way to use some leftover miso. It was the first time I tried Chinese egg noodles in a soup, and I was very pleasantly surprised. They had a very pleasant chewiness that was good with all the liquid and veggies. Plus they stayed chewy upon reheating. I'll be making this soup again.
