I want to do something different with Polish Sausage (Keilbasa) No kraut, no hot german potato salad, maybe rice...What would you suggest??

Hi, Ann

I really like red beans and rice with grilled kielbasa sliced in. Also yummy is dirty rice with sliced kielbasa.

We love a Sara Moulton recipe, Smoked Sausage Jambalaya - and it's sort of a non-traditional way of using kielbasa. We use the turkey kielbasa with it - it's delicious - one of those recipes that's more than the sum of its parts -

Here's my own very simple recipe that we like:

Kielbase and Green Beans

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------

1 pound green beans
1 teaspoon olive oil
1 clove garlic -- minced
1/2 cup onion -- chopped
1/2 pound Kielbasa, light -- sliced

1. Trim and cut green beans in bite sized pieces. Cook in small amount of water until desired tenderness; drain. In skillet sprayed with cooking spray, heat olive oil; brown onion and garlic. Add slices of kielbase and green beans and cook over medium-high heat until kielbasa is lightly browned.

Note: Good with home-fried potatoes and sliced tomatoes.

Yield: 4 servings

Per Serving (excluding unknown items): 50 Calories; 1g Fat (20.3% calories from fat); 2g Protein; 9g Carbohydrate; 4g Dietary Fiber; 0mg Cholesterol; 7mg Sodium. Exchanges: 1 1/2 Vegetable; 0 Fat.

When I was new here, and I still feel new, because I am a timid poster, I was intimidated by the search feature. Looking up one word can bring up pages of threads, and it takes awhile to find just what you need. But play around with the search, become familiar with it, and it will help a lot with your recipe quests. I hope this helps. :-)

Every once in a while, I'll put some bbq sauce and water in a frying pan with the sausage...cut up.

Anne, I don't know the Slovak name for thesse potatoes, but the translation is French potatoes. We love this. It is a taste and see recipe

1 potato per person
1 lb smoked polish sausage sliced into rings [ I usse Healthy Choice]
Sour cream[ I usse reduced fat]
hard boiled eggs sliced- aas many eggs as potatoes
Butter
salt
pepper

Par boil potatoes until soft and slice them
Butter/spray a baking dish to hold ingredients[sometimes I dirty several dishes]
layer potatoes, eggs, sausage, dollops of butter,sour cream, salt , pepper,
repeat until potatoes, eggs, and sausage are used up.

Bake at 350 covered until casserole bubbles. I know this is not exact, but it is a forgiving recipe. I think I am going to have to make this real soon. Oh, the butter and sour cream make a delicious sauce for the potaotes, eggs, and sausage.

1 large onion -- chopped
2 small red bell peppers -- chopped
2 celery ribs -- chopped
2 teaspoons vegetable oil
1 1/3 cups long-grain white rice
2 2/3 cups nonfat chicken broth
1/4 teaspoon cayenne
4 scallions
Salt -- to taste
Freshly-ground black pepper -- to taste

Cut sausage into 1/4-inch-thick slices and chop onion, bell pepper, and celery. In a dry 2- to 2 1/2-quart heavy saucepan brown sausage over moderately-high heat, stirring frequently, and with a slotted spoon transfer to paper towels to drain.

Pour off any fat from pan and in pan cook vegetables in oil over moderate heat, stirring occasionally, until onion is softened. Stir in rice, broth, and cayenne and bring to a boil. Cover pan and cook rice over low heat 15 minutes.

Remove pan from heat and let rice stand, covered, 5 minutes. Thinly slice scallions. Fluff rice with a fork and stir in sausage, scallions, and salt and pepper, to taste.

This recipe yields 4 servings.

This is another Jambalaya recipe that I have used from Epicurious.
It is my DH's favorite.

CHICKEN AND SAUSAGE JAMBALAYA




2 tablespoons olive oil
1 3 1/2-to 4-pound chicken, cut into 8 pieces
2 cups chopped onions
2 cups chopped green bell peppers
1/4 cup chopped fresh parsley
1 tablespoon minced garlic
2 pounds kielbasa or other fully cooked smoked sausage, cut into 1/2-inch-thick
slices
2 bay leaves
2 teaspoons chili powder
1 teaspoon dried thyme
3/4 teaspoon (or more) cayenne pepper
1/4 teaspoon ground cloves
3 cups long-grain white rice
6 cups canned low-salt chicken broth


Heat oil in heavy large pot over high heat. Working in batches, add chicken and cook until brown on all sides, about 8 minutes per batch. Transfer chicken to platter. Reduce heat to medium-high; add onion, bell peppers, parsley and garlic to pot. Sauté until onions are tender, about 5 minutes. Add sausage, bay leaves, chili powder, thyme, cayenne pepper and cloves; sauté until spices are fragrant and flavors blend, about 5 minutes. Add rice; stir to coat.
Pour broth over rice mixture in pot. Add chicken; press to submerge in liquid. Bring to boil. Reduce heat to low, cover and cook until liquid is absorbed, rice is tender and chicken is cooked through, about 35 minutes. Remove bay leaves. Season with salt, pepper and more cayenne pepper, if desired. Serve hot.

If you don't want to go to the work of homemade jambalaya (I know, I know...but sometimes you just want really easy :) ): Zataran's is pretty good...I add extra trinity (onion, celery, bell pepper)and lots of smoked sausage.

ok, aside from my post on the "need quick dinner ideas" thread, here is my very, ultimate, non-diet, favorite recipe for kielbasi:

4-5 qt. crockpot, coated with cooking spray
2-3 large sweet onions, sliced thin
1 cup apple juice/cider
1 lb kielbasi, 2" chunks
2 apples, cored and 8th'd
1 bag coleslaw mix
1 tsp. caraway seeds
1/2 head savoy cabbage, in 3" wedges (opt.)
1/2 head cauliflower, in large florets (opt.)

alternate layers and cook on low for 6? hours (you be the judge)

add: 1 package Poppie's pierogies for last 1/2 hour on top to steam

eat! enjoy! dark, whole grain mustard works great:)

This can be an appetizer or a main course.

Big Ol' Mess

1 lb. smoked sausage, cut into chunks
3 jalapeno peppers, sliced
1 green pepper, cut into bite-size chunks
1 sweet onion,cut into bite-sized chunks
1 foil cooking bag,or make your own
1/4 cup of tabasco sauce
1 10-ounce jar sweet-and-sour sauce

Place sausages,onion and peppers in foil bag. Mix Tabasco sauce and sweet-and-sour saucein a small bowl and pour over the mixture in foil bag; seal tightly. Place foil bag on grill; cook for about 45 minutes, turning every 15 minutes. Slit open and serve right out of the bag.
Makes 6 to 8 appetizers or 4 main course servings.

I have also made this in the oven.
