I made this yesterday and it is very easy and tasty. Completely CORE if you are following that on WW.

Vegetarian Chili with Couscous

2 teaspoons olive oil
1/2 cup onion -- chopped
1 green bell pepper -- seeded and chopped
2 cloves garlic -- minced
1 jalapeno pepper -- seeded and minced
1 tablespoon dried oregano
1 bay leaf
2 tablespoons chili powder
2 teaspoons ground cumin
1/2 teaspoon salt
28 ounces tomatoes, canned -- diced
2 cans vegetable broth -- (14 ounce)
15 ounces black beans, canned -- (15 ounce) rinsed and drained
15 ounces canned cannelini beans -- (15 ounce) rinsed and drained
15 ounces kidney beans, canned -- (15 ounce) rinsed and drained
1/4 cup whole wheat couscous -- uncooked

Heat oil in a large stockpot pver medium heat. Add onion, green pepper, garlic and jalapeno and saute 2 minutes. Add herbs and spices and salt. Stir well to coat vegetables. Add tomatoes, broth and beans and bring mixture to a boil. Reduce heat to medium and simmer, uncovered, 3 minutes. Add couscous and simmer, uncovered, 5 minutes. Discard bay leaf.

Serve with 1 teaspoon nonfat sour cream and chives.

You know... this one caught my eye too. Both for being CORE and just sounding good. I was going to make it yesterday... but I got sick. :( Oh well, I'll make it this week instead.
