I just wanted to share this recipe. It is from cooking light a couple of years ago and I found it using the recipe search on the CL homepage. There is very little fat, but it is very tasty. I like it both warm and cold, and I usually top it with strawberries and cool whip, which makes it out of this world.
Hot Fudge Cake
Our chef loves this because, "It's practically fat-free, and it's easy to make. Plus, it calls for ingredients that you always have around."
Ingredients
1 cup all-purpose flour
3/4 cup granulated sugar
3 tablespoons unsweetened cocoa
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup fat-free milk
1 teaspoon vanilla extract
1 cup packed brown sugar
3 tablespoons unsweetened cocoa
1 1/2 cups hot water
Directions
Estimated Total Time: 50 minutes
Preheat oven to 350º.
Lightly spoon flour into a dry measuring cup, and level with a knife. Combine the first 5 ingredients in a medium bowl. Stir in milk and vanilla extract. Spoon the batter into a 9-inch square baking pan. Combine brown sugar and 3 tablespoons cocoa, and sprinkle over cake batter. Pour water over batter (do not stir). Bake at 350º for 40 minutes or until cake springs back when lightly touched in center. Serve warm.
Hi Kerri, would you by chance have the calories, fat, etc.? It sounds wonderful and since I'm counting calories right now, that information would be helpful, if you have it. Thanks!

The one I make doesn't have any eggs either, but I was surprised that the CL recipe doesn't have any oil in it. Is this correct? The one I make has 2 T. oil.

Nope, no eggs or oil. The real recipe is in the cooking light recipe finder if you are curious. I think you can definately tell that there isn't eggs or oil in it, but it still is pretty good (especially with the strawberries and whipped cream).
Edited to add: Oops, cool whip, not whipped cream!

The Hot Fudge Cake is awesome with a scoop of low-fat vanilla ice-cream (Healthy Choice), it's tastes just like a browniw sundae then.

I have this recipe for the easiest cake possible.
Wacky Cake
2 1/4 cups flour
1 1/2 cup sugar
6 Tbsp cocoa
3/4 tsp salt
1 1/2 tsp baking soda
6 Tbsp vegetable oil
1 1/2 tsp vinegar
1 tsp vanilla
1 1/3 cups water
Preheat oven to 350 F.
Sift the dry ingredients into a 9 x 9 cake pan. Mix the wet ingredients together, and stir into the dry.
Bake for about 35 minutes, or until toothpick comes out clean.
Not sure of the calorie content though. But, no eggs.

The hot fudge cake is probably best right after it is cooked, right?
Or are the leftovers (heated in the microwave) just at good?

Thanks for posting the Hot Fudge Cake recipe
I made it today and it turned out great.
I didn't get to serve it when it was warm though, and had it at room temperature for dessert at Supper and it was really good.
I've put the rest on individual cake plates and will zap one in the microwave to warm it up, and I expect it to be good that way too.
If anyone would like to try this recipe my advise is to go ahead and treat your friends and family, they will like it.

I made the Hot Fudge Cake last night. And while I gave it a thumbs up and thought it was good, I doubt I'll make it again. I like the one I've made before that has 2 T. oil in it better. And I don't think 2 T. of oil in an entire dessert is a lot at all. But if you're watching every calorie and fat gram, it would be worth it to make this one. Hot Fudge Pudding Cake

Amount Measure Ingredient -- Preparation Method

1 cup all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup sugar
6 Tablespoons cocoa -- divided
1/2 cup milk
2 Tablespoons vegetable oil
1 teaspoon vanilla extract
1 cup packed light brown sugar
1 3/4 cups HOT water
Stir together in a bowl the flour, baking powder, salt, sugar and 2 T. cocoa.
Stir in milk, oil, and vanilla. Pour batter into a 9 inch square or 8x11 inch pan.
Mix brown sugar with 4 T. cocoa and sprinkle on top of the batter.
Pour over entire batter the 1 3/4 cups hot water. DO NOT STIR. Bake in a 350 degree oven about 35 to 40 minutes.
NOTES : During baking, cake mixture rises to top and chocolate sauce settles to bottom. Cut squares of cake and dip sauce from pan over each serving OR entire pudding can be inverted in a deep serving platter. Serve warm with whipped or ice cream.
