View Full Version : Need chicken salad recipe w/ no mayo

I'm going to have some leftover cooked chicken breasts and would like to use them to make chicken salad. The problem: my boyfriend *hates* mayo.
Can someone recommend a good chicken salad recipe? Either something I could serve in pita bread, or even a chicken pasta salad that could be served stand-alone...

This is from Napa Valley. You can adjust it with the amount of chicken you have.You could also use a cesar dressing on your chicken salad instead of the mayonnaise.
Oriental Chicken Salad
Serves: 4 to 6 as a main course
Ingredients:
2 cups chicken stock
1 cup Sauvignon Blanc
4 boneless, skinless chicken breasts
1 cucumber, cut into 1/8-inch slices
3 green onions, sliced
2 Tbsp. chopped fresh cilantro
2 Tbsp. sesame seeds, toasted
1 Tbsp. chopped orange zest
1/4 cup soy sauce
1/4 cup rice vinegar
1/4 cup sesame oil
1/4 cup peanut oil
1 garlic clove, minced
1/4 tsp. crushed red pepper
Directions:
Bring the chicken stock and wine to a boil in a medium saucepan over medium-high heat. Add the chicken and cook until cooked through, about 10 minutes. Drain in a colander. When cool, tear into shreds. Place in a large bowl and add the cucumber, green onions, cilantro, sesame seeds and orange zest. Toss to mix well.
Whisk together the soy sauce and vinegar. Gradually add the sesame oil in a steady stream, whisking continuously. Gradually add the peanut oil in a steady stream, whisking continuously. Add the garlic and crushed red pepper. Pour over the chicken mixture and toss to coat evenly.

Sometimes I make extra chicken breasts just to have leftovers for this salad. Use your favorite vinegarette salad dressing as a marinade for the leftover chicken. Marinate it for about two hours, up to over night. Prepare a platter of your favorite mixed green, toss with the same dressing, slice the breasts diagonally, pick them up as whole breasts and place on top of the greens and serve. I serve it with just some Italian or French bread. Mmmmmmm!

The Confetti Pasta Salad with Chicken from 2000 is good. The dressing has some ff mayo in it, but I can't taste it. The bulk of the dressing is drained yogurt.

My husband and I made a recipe from Rick Bayless Mexico "One plate at a time". I would recommend this for a salad that can be put into pita bread. It was easy to make and was very good.
