So this weekend, I made:
Salmon with Grainy Mustard Herb Sauce-
Excellent, excellent. My fiance was groaning in delight. The sauce was really fantastic - light and a perfect complement to the salmon.
Chocolate Cherry Biscotti - My first foray into biscotti- very tasty. I used a mixture of dried fruits- cherries, cranberries, and blueberries. I ate several http://www.cookinglight.com/bbs/redface.gif
Buttermilk Apple Coffee Cake - a perfect Sunday afternoon snack with coffee, reminiscient of a German tradition, Kaffe und Kuchen (coffee and cake) that my fiance and I enjoyed while we studied there. The cake was surprisingly light. I think I'll add more apples next time and make a bit more glaze.
Cheesy Polenta Casserole with Red Bell Peppers:
Another yummy dish, and a good weeknight meal because of the quick prep time. I loved the sauce! Very tangy with the balsamic vinegar.
I think all of these have already been reviewed, but thought I'd add my two cents, anyway! It was a great cooking weekend!
