I'm planning a trip to Mexico in January-the only appliance I will have with me is a Gearge Foreman grill (the "champ" or 2 burger size). I need "recipes" that need only the grill to be prepared-so many I have found start off by cooking the ingredients up in a frying pan first. I'm thinking along the lines of chicken or cheese quesadillas and the like. I will also have only basic tools available-I have a paring knife, small bowl, mixing spoon, can opener, spatula and extension cord so far. I will take along small amounts of basics like salt, pepper, sugar, cumin, chili powder, soy sauce and olive oil. I will also be taking an assortment of ziplock bags. Any recipes or ideas on what all I should add to my tool or ingredient lists will be very much appreciated.

Well, you could grill chicken, veges, etc right on the Foreman and stuff them into a tortilla which you can warm right on the little grill. Meat and vege tacos, wraps, etc. I have grilled thicker slices of zucchini, onions, tomatoes, on my Foreman and they are good!
Fish cooks well on the Foreman as well. Basically, anything that you could throw on a grill to cook quickly will work. Potato "planks" brushed with a little oil would work. The possibilities are endless!

I have a cookbook specifically for indoor grilling. The recipes are adjusted based on whether you are using a grill pan or a george foreman grill. It is divided into several sections: sauces, rubs and marinades; poultry; beef; pork and lamb; seafood; vegetables and vegetarian entrees; side dishes and accompaniments and desserts. The majority of the recipes don't require addtional cooking time, however, do require soaking in a marinade or sauce (which would require additional bowls, utensils, a whisk...). I would be more than happy to give you recipes (if there are any of particular interest to you-based on the sections above). Just let me know if you would be interested and if you'd have some simple additional "cooking equipment".

sorry. I didn't fully read the remainder of your message stating the additional items you would be able to take with you. A ziploc bag works great for the marinades. Again, let me know if any particular sections are of interest to you besides the chicken. Here's a sample of a recipe:
Black Bean Quesadillas
1 15oz can of black beans, rinsed
1 jalapeno chile, seeded and minced
2 cups shredded monteray jack cheese or cheddar cheese
1 cup diced fresh tomatoes
1/2 cup thinly sliced green scallions
1/4 cup chopped fresh cilantro
2 tsps. ground cumin
1 tsp. coriander
1/2 tsp dried oregano
salt and pepper
8 flour tortillas
In large bowl, mix the black beans, jalapeno, cheese, tomatoes, scallion, cilantro, coriander, oregano, salt and pepper. Toss to combine.
Place flour tortilla on a flat surface. Spread 1/8 of the mixture on the lower half of the tortilla, leaving a 1/2 inch border. Fold the tortilla in half and set aside. Repeat with the remaining tortillas and filling.
Preheat a large two-sided electric indoor grill according to instructions.
Place two quesadillas on the grill, close the cover, and cook until the quesadillas are golden and the filling is heated through, about 3 minutes. Set aside and repeat with remaining quesadillas.
Again, you can leave or or substitute the spices (if you don't have them available) or add chicken if you'd like, etc.

That recipe sounds great-what is the name of your cookbook? I have never even used my grill, so I'm kind of in the dark about what all I can do with it. A very basic cookbook came with it, but I could probably use another!

The name of the cookbook is "The Indoor Grilling Cookbook: 100 Great Recipes for Electric and Stovetop Grills". It's a little cookbook, however, the recipes are relatively easy to make and taste great. I've had the cookbook for several years now, I'm sure if it would still be available. I received it as a gift and am not sure where it was purchased. Again, I'd be more than happy to forward you additional recipes if you'd like. Just let me know.
Here's a chicken recipe listed:
Grilled Rosemary-Citrus Chicken (Serves 4)
For the marinade:
1/3 cup olive oil
1/3 cup orange juice
1/4 cup lemon juice
1 TBSP chopped fresh rosemary or 1 1/2 tsp. dried rosemary crushed
2 cloves garlic, minced
1/2 tsp. salt
1/4 tsp. pepper
4 boneless chicken breasts
For the marinade, combine the olive oil, orange juice, lemon juice, rosemary, garlic, salt and pepper and mix well. Pour into dish (or bag), add the chicken and turn to coat. Cover; refrigerate for 2-6 hours.
Preheat the grill according to manufacturer's instructions.
Remove the chicken from the marinade, shaking off excess.
Place the chicken on the grill, close the cover, and cook until the chicken is no longer pink in the center, about 4 minutes.
Serve immediately.
