Okay,

I have never used a sweet potato before. I've used tons of yams, but no "sweet potatos".

I had 4, two had these ugly black spots appear as I peeled. I tossed them. 2 looked pretty good, so I treated them according to the Oct 2004 recipe and put them in the oven.

I just checked them, and the black moldy splotches are appearing.
Is it normal? Or should I toss them and stick to yams?

I have never experienced black mold on any of the varieties of sweet potatoes I've used. But I think that I would, to be on the safe side, toss them out.

Also, most "yams" sold in the United States are, in fact, mislabeled sweet potatoes. :)

Here's a link to the differences between the two.

I hope this mold experience hasn't put you off of these tasty tubers forever! :)

I sometimes have black spots after they've sat for awhile.
I don't think it is mold...I think they are bruised.
I have found moldy sweet potatoes (same as some people call yams) and they are fuzzy and icky looking.

Funny you should ask this question. I bought sweet potatoes a few days ago. Last night, I went to cook one. After two days in my potato drawer, it had a big honkin' black spot. The spot was oodgy, fuzzy and thoroughly revolting.

Ick.
