Barbra has gotten us all dancing the TGIF dance, so I thought I'd expand on her message by asking WHAT you all will be cooking this weekend. We do this once in a while and I love to drool over what everyone is making.

I have a bunch on the list, but as I said before, we'll be doing taxes and organization (the paper stacks are beginning to overun the place), so I know I won't get to all of it (but definitely the dinners).

Tonight - the Caramelized Onion Lasagna with Gorgonzola Sauce from April - with swiss chard in some form, and fresh bread (carbs, carbs, carbs http://www.cookinglight.com/bbs/smile.gif ).

Saturday - Crab Cakes to use up some lump crab in the freezer. With it - green beans? Salad? Don't know yet.

Sunday - Probably leftovers if the fridge gets too stuffed. Or homemade pizza.

I'd also like to start stocking up for Easter and other things, so I'd like to make banana bread, zucchini bread, meatballs, cheese crisps, cookie cups and/or pecan tassies.

I don't have it all quite figured out, but some Salmon Fillets tonight, a Shrimp Linguine tomorrow, and for Sunday, maybe a pork loin - but not sure yet. The side dishes are probably rice pilaf, roasted asparagus, and a green salad for tonight.

I love these threads!

Tonight I'm making the Artichoke and Spinach Tian from April, and I think I'll just serve it with quinoa and maybe some roasted carrots and/or red peppers.

Tomorrow I have a date with pilot-boy, (wahoo!) so I'll be eating out (hopefully something Thai or Indian, if he lets me pick http://www.cookinglight.com/bbs/smile.gif )

Sunday, I think I'm doing Grilled Polenta with Wild Mushrooms and Sherry (From The Occasional Vegetarian ), and I'll probably serve it with herb-roasted zucchini and a salad of some sort....oh, oh, I think I'll do the basil/tomato/fresh mozzarella thing Gaye mentioned. Yum!

Not sure about the whole weekend yet but tonight I am making Alice*'s pasta with Asparagus and smoked salmon! I have been meaning to try this for awhile so am quite excited!

Sat. it will be Peppercorn Flank Steak -9/98, Two-Cheese Potatoes -11/98, and Grilled Sweet Onion Rings Dijon -3-/93

Well, I am finally going to finish off the "must-try's" from the How to Cook Chinese article (Jan/Feb I think). Moo-shoo pork with mandarin pancakes and the steamed dumplings for an appetizer. I also plan to make a few of those picnic recipes from the April issue to take for lunch next week. The marinated mushrooms and potato salad both looked yummy. Now I'm getting hungry!!

No cooking for me tonight or tomorrow, but Sunday, which is my regular cooking extravaganza day, sees:

BBQ Chicken Potpie (DH loves it)
Creamy Chicken & Mushrooms (April '01)
something else, maybe a casserole, that will be good for leftovers during the week,
and more of those YUMMY Baker's Death by Chocolate Cookies!

Longhorn: I've made several of the Chinese recipes from Jan/Feb. The steamed veggie dumplings were really good, but leave out the salt if you're not using low-sodium soy sauce. Also, the kung pao chicken was fabulous. I thought the moo shu & pancakes were OK, but not worth all the effort -- the dish took me a LONG time to prepare. DH loved the pancakes, though! I would recommend leaving the hoisin sauce off the pancakes and using some plum sauce as a dipping sauce instead. The hoisin was too strong for the light flavors of the moo shu. Just my opinion.

Happy weekend, everyone!

Tonight we're doing homemade pizza (family recipe) and the CL Buttermilk Apple Coffeecake (April 2001). This weekend, I'm going to try the CL Chicken/Mushroom dish that's featured in this month's issue (can't recall the name). As suggested, we're having roasted asparagus with. BTW, we tried the roasted asparagus last weekend-I've never had it that way before, and I don't think I'll ever make "naked" asparagus any other way in the future, it was that good! We may try the Florentine Fritatta this weekend as well, depending on my Sunday a.m. motivation after snowshoeing (I hope!) all day Saturday. http://www.cookinglight.com/bbs/biggrin.gif

I'm cooking for a new baby's family, so a lot of my recipes are doing double duty.... Also we have company coming in from out of town so more snacks than usual...

I'm making stromboli with pepperoni and cheese, the antipasta salad (December), the tropical fruit salad (January, I think) buttercrunch lemon cheese bars (January--so good), homemade salsa, spinach queso dip, and a creamy chicken casserole (Complete CL).

DH is making the shrimp tortellini salad for dinner for us tonight.

Yippy! Saturday night is my CL Cooking Club Dinner. I always look forward to your meals. I don't remember what we are having, but I know everything is from the February issue. I'm making Shrimp Fried Rice .

I'm planning on making Banana Peanut Butter Pie from July (?) 2000. I've made it before and it is wonderful!! One time I added chopped peanut butter cups to it and that was just as wonderful!

I was just thinking about my menu for next week.

Tonight is a roasted veggie pizza - I made a double batch of veggies last night so will have quesadillas sometime next week.

Saturday will probably be the Dijon salmon recipe from April with perhaps the Leek & Marscapone Risotto posted on the board recently or the onion tart thing from the French section of April. Hopefully asparagus will be affordable to go with it.

Sunday, I'm also having the Carmelized Onion & Gorgonzola lasagna. Fresh bread with it of course - probably some type of potato bread as I'm experimenting this weekend with making purple bread for my husband's upcoming "Purple People Eaters" office day/pot-luck. figured I could use purple potatoes....

I'm thinking buttermilk pancakes for Sunday breakfast with strawberry-kiwi smoothies.

Tonight it is plank salmon and spinach souffle with herb feta.

Tomorrow we are having a casual dinner party and serving:
App: CL spinach and artichoke dip (yummy!) Dinner: grilled steaks, feta potatoes gratin and CL greens with berry dressing (just found this one and love it!).
Dessert: Eating well cake and Lemon cheese crunch bars (can't remember what they are called). I love having company so I can try all the desserts I've been meaning to make.

Sunday: chicken florentine casserole and some bread (haven't decided yet).

What a bunch of ambitious cooks! I want to make the cream of asparagus soup that was posted last week by Edmg (I think that's the right name) and a blueberry coffee cake- the recipe was in an ad in the paper. It looks pretty light. Other than those two things, it's all up in the air! I am hoping to have Mongolian barbeque for lunch tomorrow with my friend. I hope I hope!!

lindrusso--how funny, I've been thinking of crab cakes too. I was going to try the Thai Crab Cakes with the Cilantro-Peanut Sauce . I also found the Meditteranean Salmon Cakes with Dill Yogurt Sauce which piqued my interest as they use chick peas in them. I'm a little stumped as to which I'll try on Sat. night--also stumped on a side dish to go with these.

Tonight--going out for sushi--our main treat in life. Yummmmm!

Also on the menu for this weekend: either the Moosewood Sweet Potato and Black Bean Burritos or some Maple Glazed Salmon with the Butternut Squash Souffle for Sunday. I'll just wait and see what we are in the mood for. I'm also going to do a little breakfast baking and freeze some cranberry bread and oat muffins to take to work during the week. Possibly homemade pizza or some of olga's flatbread if I get really ambitious. This is making me hungry.

Tonight I'm making the spinach risotto valchemist posted recently. Over the rest of the weekend, we'll have stuffed shells, the bulgar salad from the March issue, and monkey bread. I'm trying to clean out my pantry and fridge before Passover begins, so I might also make a chocolate cake or biscotti to bring in to work next week (and use up the rest of my flour.)

Tonight is my last opportunity to cook for a week and I want to use up some leftovers. I'm going back to March '01 to try the Pork Medallions in Caribbean Nut Sauce (using up the rest of the ginger from last night's fettucine and peanut sauce, the crystallized ginger from holiday gingersnaps, and the red onions lurking in the fridge)

Would you think it possible/advisable to substitute natural peanut butter for the peanuts and hot H20?

I turned the page and decided to go for the Gingerbread Cake - something nice to take on the plane tomorrow- I always pack my own lunch- and to leave for DH.

During the weekend I am thinking of some kebabs if it warms up and stops raining if not arroz con pollo tostones and a salad (& a side of red beans)....

KValley - I think it would actually work well to sub the natural peanut butter. You'd get more of a sauce, and I imagine the flavor would be the same.

We're having a dinner party Saturday, too (just 6 of us, though, so not too stressful). I invite friends over for dinner as a way of forcing myself to learn how to cook & try new recipes... I want to get all the practice in I can before we have kids and I have less time to figure out new stuff! Anyway, the menu is:

Asiago cheese dip with crostini (I've made this before and it's sooo yummy)
Pork loin with leeks -- This Mar '01 recipe got lukewarm reviews, but it looked easy and freed up my oven for...
Aw Maw's Potatoes -- My first time trying these, they sound popular with all of you so I know they'll be good!
Garlicky Green Beans This was posted by someone recently--sorry, I forgot who--and I made them once with delicious results...
Eating Well's D.A.W.T.H. Chocolate Cake Sounds like I'm not the only one with this idea!

Good question, I hadn't been thinking about it... I will definitely be cooking up leftover foodstuffs this weekend. I wasn't able to eat for a couple of days so I don't want my fresh food to have to be tossed.

Definitely the low-fat banana bread posted here (my bananas are thawing right now!). I will be trying to gobble up my hotdog buns before they go stale (It was the most i've ever paid for buns and I'd rather eat them fresh than from frozen). So I'll be noshing on Morningstar soy dogs and some inventive side dishes, like Llapingachos Ecuatorianos -- potato and cheese patties from April.

I have an unopened bag of baby carrots that are "best before" 3/31, so I'm thinking of devoting them to the Carrot-Ginger Soup from the Soup and the City story.

No ideas as of yet for my bunch of baby spinach. I may just make a spinach-artichoke dip and use the carrots as crudites.

WOW - you are all so organized! This has been a week of all weeks...BUSY...& I haven't had much time to think about this weekend and/or cooking. I usually do try to do some "make ahead" cooking & freeze stuff for dinner during the coming week.

pmmahan-I'd love to have the cheesy polenta casserole recipe, can you point me in the right direction?

emilycat-you mentioned a "date with pilot-boy"...do you fly? My DH has his private license & I LOVE the right seat.

I loved reading about what everyone is cooking this weekend... having just returned from a trip to Washington DC (where I ate at two of the most highly rated restaurants in the District) and in light of the fact that I have dinner reservations at The Melting Pot on Saturday, I am pretty much taking the weekend off from serious cooking, but I may make my grandma's enchiladas on Sunday.

cmj-do you and your husband have a plane? I love flying, have taken lessons, and my SO is a commercial pilot. Gina

Last night I made the Sichuan-Style Stir-fried Chicken with Peanuts (Jan-Feb 2001) for my mother. It was delicious, but we didn't eat it right away, it was on the stove on "low", and it dried up a bit.
For desert, we had the Heath Bar Marmalade Crumb Cake (from another thread) and that was wonderful.
This morning, I made the Strawberry and Cream Cheese filled Muffins. I'm disappointed in those - I didn't have quite 2T of jam left, and that's a big loss.
On my list is the beef with Rosemary-mushroom sauce (March 2000).

Angela, or anyone who knows, how do you do bold?

Man do you guys know how to make a girl drool! Everything sounds so wonderful. Let me give you a sample of our "special" dinner tonight. As my husband is out of town I gave my 4 year old son his choice of dinner. Here we go.

Dino Chicken nuggest from Costco. Mandarin Oranges from the can. Raw carrots . A smoothie (of which he only had one sip. but the baby drank all of hers!) and homemade peanut butter chocolate chip cookies .
Tomorrow will be french toast with homemade bread, lots of syrup and extra sugar for breakfast with orange juice .
Peanut butter for lunch.
And we have not gotten around to planning dinner yet.. most likely the same as tonight.

The kids are now in bed and I am enjoying a bit of Mondavi Chardonnay along with some brie cheese and crackers . (I need something to make up for that dinner!)

Well, Friday is our big night together (the rest of the week I either work or have class), so I usually try to make something extra good. I dug up an old recipe from a 98 CL (sorry, I can't remember the month), Pasta with Arugula and Sun-dried Tomatoes. I made it with whole-wheat spaghetti from Trader Joe's and spinach instead of arugula (the arugula at the grodery store was something like $4 a pound!) We had this with a salad. Last night we had butternut squash ravioli, red & yellow peppers and green beans with low fat alfredo sauce (from the bb). On Friday, I had a wonderful Beringer Gewurztraminer with the pasta and my husband had a beer. Tonight I am working so dh is on his own (he'll probably have left-overs from Friday).

This was a great cooking weeekend.

Friday I went out for a fantastic dinner and had Indian Curry Pasta with Coconut Shrimp - YUM.

Saturday I made Turkey Meatballs for the freezer (my Italian mother in laws recipe), and Oven Roasted Eggplant Slices - for lunch / to snack on. Today I made Jewels Chili Chicken Cheese Choweder (BB)and Peanuty Noodles with Chicken (CL 2000) for lunches this week. For dinner tonight we had Lemon Basil Schrod (from teh BB), and fresh spinach. No dessert until Lent is over....

LOL on Kim Kelly's reply! Sounds like my family's weekend.

Actually, tonight we all made our own pizzas. I bought refrig dough and everyone did their own thing. It's fun now that my kids are old enough to do this.

Would love to hear reviews on all those tasty-sounding CL recipes. I kind of cook vicariously through you exotic cooks.
