View Full Version : Fresh Spinach Idea Needed

I bought a bag of fresh spinach at Sam's last weekend. It expires today. I have eaten spinach salad almost everyday this week at least once. http://www.cookinglight.com/bbs/smile.gif It has been very good! I am ready to cook what is left. Any ideas? I will be leaving town next week so I don't want to go out and buy ingredients. I have typical spices like garlic etc. I would like saute it in something maybe?

There was a recent thread called "calling all spinach lovers." I will post the link below. There are recipes for creamed spinach, tuscan greens with beans [my contribution and personal favorite], green risotto, etc.

This is a really tasty spinach recipe. You said you've been eating spinach salad all week, but this is a hot salad that is just fabulous. Not cooking light, although maybe you could substitute egg whites and bacon bites. Enjoy!
Hot Spinach Salad
Ingredients
4 eggs, hard cooked
8 slices bacon, cooked and crumbled
1 (10 ounce) package fresh spinach
1 small onion, chopped
6 tablespoons vegetable oil
3 tablespoons lemon juice
2 cloves garlic, minced
salt and pepper to taste
Directions
1 Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
2 Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
3 In a large bowl, combine the eggs, bacon, spinach and onion.
4 In a small bowl, whisk together the oil, lemon juice, garlic and salt and pepper. Pour over salad and toss well to coat.

What about the Spinach-Artichoke Tian in this month's French cooking section? With 1 bag of spinach, you could do half of the recipe.

If you want to try a sauté, you can use any combination of the following: olive oil, garlic, onion, roasted red peppers, balsamic vinegar. Sauteéd spinach is great alone or as a bed for fish. Mmmm.....
I was the one who posted the Chicken Florentine Casserole - another great way to use spinach. If you just use the search function on this board, you can easily find that recipe. I also have a recipe for an easier spinach/pasta dish that is quite good. Let me know if you need any recipes.

What about the Cavitappi with Spinach, Beans, and Asiago Cheese from CL Complete? I made this Friday night and enjoyed it. The fresh ingredients give it great flavor.

Thank you all so much for your help with finding a recipe for the spinach. I am going to try the creamed spinach tonight. I chose that partly due to the few ingredients I would need to buy . I am looking forward to trying some more of the ideas you all gave me. Thanks again, you are all wonderful!

I made the creamed spinach last night. I served it over baked potatoes with Roast Lamb. It was wonderful - definitely a make again recipe!

Alysha - would ya please post your recipe - everything you post is great - I have just given (for about the 10-20th time) your spinach ball recipe - I love it and so do a whole pile of my friends! Your Chicken Florentine Casserole is wonderful too - think I have already made a post on that - thanks for some really great recipes!

Thanks so much! I got this recipe from a friend - we are in a recipe club together and the theme was side dishes, but I think it would make a good main dish as well - I don't tend to make pasta as a side dish for some reason.
Now that I type this out, I realize that this calls for frozen spinach, but.....
Spinach Parmesan Linguine
1 package (16 ounces) linguine (she used angel hair which worked nicely as well)
1 cup chicken broth
1 small onion, chopped
2 garlic cloves, minced
1 package (10 ounces) frozen chopped spinach, thawed and well drained
1/3 cup milk
2 tablespoons cream cheese
salt and pepper to taste
1 cup (4 ounces) shredded Parmesan cheese
1/2 cup shredded mozzarella cheese
Cooking linguine according to package directions. Meanwhile, in a saucepan over medium-high heat, bring broth to a boil. Add onion and garlic. Reduce heat; cook uncovered for 5 minutes. Stir in spinach; cook for 2 minutes.
Add the milk, cream cheese, salt and pepper; stir until cheese is melted. Drain linguine and place in a serving bowl. Add sauce and toss to coat. Sprinkle with Parmesan and mozzarella cheese; toss to coat. Yield: 10 servings.
