View Full Version : Easy, delicious crock soup recipe to share

I love this crock pot soup! I make it a couple of times each month -- year round. I'm told it's a weight wathers recipe and it looks like it would be CORE. It's really easy and very tasty. I use frozen chicken breasts and just dump everything in the crock pot.



Mexican Chicken Chowder

Amount Measure Ingredient -- Preparation Method

4 chicken breasts without skin -- frozen is fine; (4 oz)
2 cans chicken broth -- 99% fat-free
2 cans black beans
2 cans rotel tomatoes
1 can corn
1/2 package taco seasoning mix
dash chili powder

Place chicken in bottom of crock pot.

Add remaining ingredients.

Cook on low all day.

When ready, remove chicken breats, chop and stir back in to mixture

This looks yummy. I am trying to use my crockpot more. I have 2 questions-what size is your crockpot and do you drain the corn?

Moonbeam -- My crock pot is 5 qts. I don't drain the corn. I do drain and rinse the black beans but it's really a preference not a necessity. It's turned out well either way.

Thanks for the info. I see that you are from Grapevine. My husband had a conference there last May and we stayed at the Gaylord Texan. It was beautiful.

Hey everyone, this recipe is really good. I got my copy of it at a meeting but I also believe that it's in one of thier cookbooks. I went to double check and realized I loaned that cookbook out and haven't gotten it back yet.

Thanks for reminding me of it. I just pulled my crock back out with the change in weather and kids back in school and everyone in my household loves it.:D

garden_girl_kp -- I think it came from a WW meeting (it was passed on to me) but I'll bet it's in a cookbook, too. I just don't have any idea which one. It's funny -- I started making this even before I joined WW - just because it's so good!

moonbeam -- haven't been to the Gaylord Texan yet. I hear it's incredible, though. Maybe over the holidays....

I just put all the ingredients in the crock to get ready for the a.m. It's a big bunch of soup!! Has anyone tried freezing it?

Thanks for posting. This looked so easy and I had all the ingredients so I just went into the kitchen and tossed it together. I was searching for a crock pot meal. Usually this is a school day for me, but youngest ds is sick so we're having a couch potato day.

Can't wait to try this tonight!

Haven't tried to freeze it - we usually take the leftovers for lunch -but I don't see why you couldn't.

We really like this for a quick simple dinner. Although, I could have increased the heat. There were no Rotel tomatoes last time I shopped, so I got the Delmonte mild chile tomatoes- and they ARE mild. Added some shredded chedder to the bowl, and enjoyed.
