Last night I made Lorilei's Easy Pesto Salmon . This has already gotten a lot of good reviews, so I won't go into detail except to say that, like everyone else, DH and I really enjoyed it. Quick to make and clean up too!
I had a some salmon left over, and used it to make the Barley-Salmon Salad with Arugula Vinaigrette for lunches this week. I also really enjoyed this. I used white balsamic vinegar instead of the white wine vinegar, and also added some toasted chopped pecans. I was a little concerned about how well it would hold up as I mixed everything together last night, but it was fine at lunch today and the flavors had come together nicely. I did let it come up to room temperature and think that helped to. DH heated his up because he doesn't like cold salmon, and said it was also good that way (but he didn't get the pecans, because I didn't think of that until after he had already left for work http://www.cookinglight.com/bbs/smile.gif )
