It was fantastic!! Thanks so much. I could serve it again tonight and everyone would be happy. I served it with adapted Pork and Rice Noodle Salad with Lemon-Coconut Dressing. I left out the pork, put the ginger and garlic in the coconut milk mixture, and added shredded carrots, yellow bell pepper, green onions and grape tomatoes. I went with it well.

we also made a thai chicken pizza this weekend. the recipe was from that thread where everyone was furiously searching for the CL teriyaki chicken pizza that wasn't in the magazine...

this one wasn't the CL recipe (although we will be trying that this month probably). it was from a website that someone posted a link to - it had a peanut sauce and was topped with carrots, green onions, and sprouts (but i used broccoli instead). it was very tasty - we will definitely make it again, although i don't know how light it is...
