View Full Version : KA's Cranberry Orange Nut Bread?

I made this from the Baker's Companion yesterday -- wow! Very moist and full of yummy bits. It is a very flat loaf; I'm not sure if it was supposed to be.
In any case, I think I've found a new standard baked gift, as it was very easy to make, and even I get tired of lemon-poppyseed once in a while.

I'll try to find time to do that tonight. I love the cookbook; haven't had time yet to make much from it but am seriously considering cooking my way through the whole thing.

Here you go:
2 c flour
3/4 c sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
3/4 tsp salt
zest and juice of one orange, or 1/8 tsp orange oil and 3/4 c orange juice)
3/4 c (6 oz) buttermilk, sour cream, or yogurt
1 large egg, beaten
3 Tbsp veg oil
1 c fresh, frozen, or dried cranberries, roughly chopped
1/2 c chopped nuts (optional)
1. Preheat oven to 350.
2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
3. In a medium bowl, combine orange juice and zest, buttermilk, egg, and vegetable oil.
4. Add the wet ingredients to the dry and mix until evenly combined.
5. Stir in cranberries and nuts, then pour into a greased 9x5 loaf pan.
6. Bake 55-65 minutes or until tester comes out clean.
7. Remove from oven and cool on a rack for 15 minutes, then remove from pan and finish cooling. Will slice better if wrapped and left to rest overnight (but who can wait that long?).

I made this on Sunday night w/ fresh cranberries I got on my Trader Joe trip. It is delicious! Very moist and full of great flavors. Thanks for sharing veschke!

I just love the KA Baker's Companion. I just got my copy this weekend and both recipes I made were excellent!

How do you chop frozen cranberries? I froze some from fresh this week and now I realize I'm not sure how to chop them for bread. I would think I would want to leave them frozen to cook but how do you chop them that way? TIA.

The easiest way to chop cranberries, frozen or otherwise, is in a food processor. JMHO!

Thanks for the recipe. I just bought a couple of bags of fresh Maine cranberries yesterday, now I know what to do with them!
