I'd love to try the Cappuccino muffins posted on a different thread. The recipe calls for cappuccino chips - never heard of them but found them at the King Arthur website.

Has anyone found these locally? A quick check of the 3 major grocery stores in my area produced nothing. Of course I want to try them right away, rather than order through the mail and wait for the package to arrive!

Thanks
Nancy

Chocolate Cappuccino Oat Muffins

Recipe By :
Serving Size : 12 Preparation Time :0:00
Categories : Chocolate Muffins

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 cup old-fashioned rolled oats
1 cup nonfat buttermilk
1 2/3 cups whole wheat pastry flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 cup chocolate chips
1/2 cup cappucino chips
2 large eggs
1/2 cup brown sugar, packed
2 tablespoons canola oil
1/2 cup nonfat vanilla yogurt

Preheat oven to 375 degrees. Prepare a 12-cup muffin tin or a 24-cup mini muffin pan, by coating pan with nonstick spray or by using paper liners.

In a medium size bowl, combine oats and buttermilk. Let set 30 minutes.

In a large mixing bowl, combine flour, baking powder, baking soda, salt, and cinnamon. Stir in chocolate and cappuccino chips until coated with flour mixture. Make well in center of bowl. Set aside.

Add eggs, brown sugar and oil to oat mixture; mix until well blended.

Pour egg mixture into bowl of dry ingredients; mix until just moistened. Fold in yogurt.

Fill muffin cups 3/4 full and bake regular-size muffins for 15-20 minutes and mini-muffins for 13-15 minutes, or until golden brown and tests clean with a toothpick.

NOTES : Makes 12 regular-size muffins or 24 mini muffins
Can sub AP flour for WWP flour
Can use all chocolate chips, instead of half chcolate and half cappucino. May want to try a variation: use all cinnamon chips and increase the cinnamon in the batter, or use half cinnamon and half chocolate chips

"Tropical Source" the chips recommended by Cooks Illustrated a few years ago used to make a cappucino chip. I haven't bought any for awhile but my local Co-op and Woodman's used to carry them.

Good luck!

Ok, thanks for the suggestions. I just did a quick check of Super Target locations - none within 200 miles.

I guess I'll either have to order them from KA, or take a road trip to Vermont!

I've seen them listed on Trader Joe's site, but have never seen them at the TJ's near me. They may be available at some locations. I was fortunate to find them at Super Target. They really are a must for the muffins as this is what makes them a different muffin.
