Danielle, you just reminded me again how much we loved this recipe!! I try so many new recipes from CL that I forget sometimes about 'repeaters'. I'm going to have to start menu-planning soon so I don't forget these favorites!

This Chicken/Orzo dish was one of the most flavorful and rich lowfat dishes I've made in years. The only change I made was that I cubed the chicken to make it more of a 'casserole' dish, and my husband loved it that way. I'm gonna have to make this one again this week! Danielle, thanks for posting the recipe - this will make it easier to put it in my favorites computer listing. However, I did find my magazine with the recipe and made it for company Friday night. Everyone loved it, even my picky husband, who eyed it suspiciously. It's so neat - I've tried a couple of new (new to me) CL recipes on company and the result has been so fantastic. Of course, I had the okay from this board first!! Nobody could believe it was from CL!! (Healthy) I was thinking next time I might just omit the ham. What everyone liked was the creaminess of the sauce. I had huge chicken breasts, so I thought next time I might pound a little thinner so it cooks more evenly. I'm rattling on....thanks so much!!!

Chicken Fricasse with Orzo

4 boneless skinless chicken breasts
salt and pepper
1 tablespoon butter
1/2 cup diced carrot
1/2 cup diced cooked ham
3/4 cup chopped green onion
2 cloves garlic, minced
1/2 cup white wine
1 cup less-fat chicken broth
1/3 cup whipping cream
3 cups cooked orzo (1 1/2 cups uncooked)

Melt butter in pan over medium heat. Season chicken with salt and pepper, and brown on each side 3 minutes. Remove chicken from pan and set aside.

Add carrots, ham, onion, and garlic to the pan. Cook until lightly browned, about 4 minutes. Pour wine and broth into pan. Add chicken back to pan and bring to a boil. Reduce heat, cover, and simmer for 10 minutes or until chicken is done. Remove chicken from pan and keep warm.

Add whipping cream to veggie/broth mixture. Cook uncovered for 8 minutes.

Serve chicken on top of cooked orzo. Top with cream mixture. Serves 4.
