View Full Version : Which knives do you like to use?

Looking for opinions. I know how it feels in your hand matters but to be honest when I bought my santoku knife from wusthof I never held that in my hand because I purchased it online without even knowing how it felt when I held it. I am looking to add more knives so I can get rid of the knives that have been dull since the day that I bought the things. What I was wondering is what is top of the line in both wusthof and henkels. What is the difference, if any, between the wusthof grand prix knives and the classic ones. I can't find the information that I had saved on this and the price is the same in both product lines. The look of the handle is different but is that the only difference in them, I can't remember. I've never read any information on the henkels so any opinions on those would be appreciated. I am not looking to stay with one product line if I have to buy a henkels or wusthof grand prox then I will. I need 1 more chef's knife, I would like one of those 4 1/2" blade knives and I need at least 2 paring knives and am really thinking of getting one of those curved blade ones (birds beak?) So, which knives do you own and like to use?

Outside of the forged/stamped blade quality difference, I think the only difference in a company's line is the shape of the handle. Once you find a line that's comfortable for you, you can stick with it.

My husband has large hands, so the Wustof classic works the best for him. It feels good in my hands too and gives me a little more protection between my fingers and the blade (that ridge where the blade meets the handles). We also have an Emerilware by Wustof chef knife that is made of softer composite material similar to the grand prix handle. That knife feels really light. My husband likes it, but I stay far, far, away because I think it would slip out of my hand. We also have some Chicago Cutlery knives with the black composite handles. I don't think they stay sharp as long as the Wustof, but I've gotten a good 3 years use out of them so far.
I think you should go to a kitchen store that carries an assortment of Wustof and Henkels. Try the different ones in your hands. See what feels the best. Williams-Sonoma carries a large assortment of knives, some local kitchen stores do, Bed Bath and Beyond might carry some... Beware, there is a Henkles International line made in Taiwan that are knockoffs of Henkels Germany. They're cheaper because they're stamped blades, not forged.

I was going to suggest the same thing. It's really the only way to know what works for you.

I have a Cutco knife set and am very happy with them so far. I also have Henckels steak knives and a bread knife, which are just OK. I def. like Cutco's better.
In terms of grand prix vs. classic wusthof, really it's just a personal preference. A BIG difference, however in wusthof vs. henckels is that your Wusthof knives have a lifetime warranty, whereas Henckels is only one year. BEst of luck in your quest for teh perfect knives!
