I, I know with others on this board, gave up dessert for lent. I am dying for sweets!! I cannot wait for Easter dinner. Based on a thread I read earlier I think my special dessert that day will be the white chocolate rasberry cheesecake. What are you planning for your Easter dessert?

My FIL has been wanting cheesecake, so I think I'm going to try the lemon swirl cheesecake -- it seemed to get lots of good reviews on this board.

My family and friends have requested a Coconut Cake (not lowfat) that I found in Southern Living. If you like coconut; it is devine. It is made with frozen, fresh coconut (not the sweetened coconut). It has coconut in the cake and a coconut filling that goes between the layers (it is a 3 layer cake). Frosted with whipping cream. I suppose I could use Cool Whip, but it is so outrageously non-healthy anyway, that I go for broke and use real whipping cream. Needless to say, I don't make this very often.

Did you see the chocolate thread that Lynn started? The brownie cups she posted made me want to cry (along with all the other recipes). Think I'll give those a whirl. You can count me among those anxiously awaiting the first indulgence on Easter!

Since my guests will be arriving before Lent is over and I don't want to be rude and not make dessert, I decided on CL's Fresh Strawberry Pie - I can have the strawberries without the crust and won't feel so deprived!

We always have strawberry shortcake. Ham, creamed potatoes, asparagus.....can't wait.

I'm making either a tofu cheesecake or key lime pie. Maybe both!
