I have yet another question since you're all so helpful, and creative. I made the applesauce spice cake from the 2000 annual cookbook (I think its that one-I have so many). Now, I have some apple butter left over. Any suggestions how to use it up?

It's great on toast- especially cinnamon raisin bread. Also warm, on vanilla ice cream.

I second the idea for toasted cinnamon raisin bread! Also, I like it on almost any kind of "hearty" bread like the Bra'nola brand or a loaf bought from a bread bakery.
I grew up on the apple butter/cottage cheese combo; however it's not one of my current favs. I prefer on bagels. As an aside, SusanL, I grew up in the Reading area, and still have family there. I still visit frequently and love Wixon's shoofly pie. sally

This is my favorite quick bread.
Apple Butter Bread
2 cups flour
1 1/4 cups sugar
1 tsp baking soda
1 tsp cinnamon
1/2 tsp allspice
1 cup apple butter
3/4 cup buttermilk
1/2 cup oil
3 eggs
2 Tbs molasses
1 cup raisins
1 apple, peeled, cored and chopped
Bake at 350 degrees for 45 minutes in greased loaf pans.
I'm sorry, I tend to leave off directions when friends let me copy recipes (saves me writing time). I just sort of beat everything together with the mixer and then stir in the raisins and apple. You can also add a cup of chopped walnuts if you like.

Apple butter and peanut butter sandwiches! I used to eat those when I was little. Almost anything goes with peanut butter.

My kids love it on waffles instead of syrup. I love it with cream cheese or peanut butter on anything-crackers, bread, bagels etc...

Sally, it is not one of my favorites either, but I know that it is really popular in Berks County! Students from other states and areas would go crazy at the college cafeteria for this combination- I never got it!!
Also, I have never had Wixon's shoo fly pies, will have to try that one!! I have seen it at the local grocery stores and since I have recipes for my own, I have never bought it.Thanks, will have to give it a try!

Hi. You can use the apple butter as a fat substitute in your baking (much like prune puree)....or enjoy it with waffles, toast etc.
