View Full Version : Need help with a specific cut of beef...

I bought a beef chuck "tender" roast (almost 2 lbs.) the other day and I have no idea what to do with it. It looks nothing like the usual chuck roasts I buy. This is kind of long and tapered at one end and looks leaner. Any recipes or ideas?

This cut is still from the chuck section and is consider a less tender cut of meat. And the best method for those cuts is moist heat. So a slow cooker, pot roast, Sauerbraten, Goulash...

You could do a barbecued beef. I've seen a recipe in CL for it.

There was a recipe on the "Back to the Best" page of CL last year that called for chuck roast... I think it was called beef carbonnade...I've made it and it's quite good!
