What is your favorite cut of beef for making soups such as beef/vegetable? I usually use beef shank but although the flavor is good you don't get a lot of meat. Curious what others prefer

I usually use a shank in addition to chunks of Chuck roast or steak.

Do you mean raw chuck roast (as opposed to leftover meat)?

Yes, raw chuck that I've cubed and browned first.
I use chuck or top sirloin chunks and brown them as Sneezles does.
You could add leftover meat to a soup, but you would want to add it late in the game, and it won't give you as much flavor. A good way to use up leftovers though.

My favorite is chuck. I cut most of in cubes and leave a few large chunks. When I eat the soup I eat the large chunks separately on a plate with catsup. The meat is meltingly tender. My Mom fixed this for us 60 years ago and I still love it that way. As far as the soup, chuck does give the soup a very good beef flavor.
