cas, I have the recipe at home. I'll post it tonight. You're talking about the sunshine cake with mandarine oranges right? My husband loved it and it's so light!!

Hi Cas, here is the recipe:

Pineapple-Orange Sunshine Cake from Prevention

Cake
1 box Sweet Rewards yellow cake mix
1/4 c applesauce
4 eggs
1 can (11oz) mandarin oranges in light syrup

Frosting
1 container (8oz) light whipped topping, thawed
1 pkg (3.4oz) instant vanilla pudding
1 can (15.5oz) crushed pineapple in juice

1. For the cake: Preheat the oven to 350F. In a large bowl, stir together all the cake ingredients until moist. Beat by hand for 2 minutes.
2. Coat a 13"x9" cake pan with cooking spray. Pour the batter into the pan. Bake for 30 to 40 minutes, or until a toothpick inserted in the center comes out clean. Cool completely.
3. For the frosting: In a large bowl, mix together all the frosting ingredients until well blended. Spread over the cake. Store in the refridgerator. Serves 16

Per Serving:
212 cal, 3g pro, 41g carb, 4g fat, 2g sat fat, 53mg chol, 0.5g fiber, 293mg sodium

I couldn't find the Sweet Rewards cake mix so I just used a regular one. Maybe the fat might be a little higher, I don't know. It still worked wonderful using a regular cake mix. I think you'll really like it. Let me know what you think after you've tried it. My husband enjoyed it so much that I'm going to make another one this weekend and we just finished the first one a couple of days ago! http://www.cookinglight.com/bbs/biggrin.gif

hka, when you make the Sunshine Cake, do you drain the mandarin oranges or leave the juice in?

This cake looks very similar to something a friend of mine had made years ago, and I remember it being very good!

hka, This looks similar to the one my friend used to make, however, that was in the days before any of us were concerned about "light" cooking! I am sure hers had many more calories http://www.cookinglight.com/bbs/smile.gif This looks good, and so easy, so I am definitely going to try it soon!
