View Full Version : Veggie soup recipes?

I'm looking for some hearty vegetable soup recipes now that the colder weather is here. I'm pregnant and due next month, so I want to make a big pot of something without too much standing at the stove.

I'd love some good ideas.

Here is a good one that I got from my friend. She made it for my DH and her mom when they were both on chemotherapy. I have to tell you that 1 week this was literally all my DH could keep down. Also, at the time all his numbers were low (white blood count, red blood count....etc, etc....) After a week of eating this his number shot up. The doctors were totally amazed. So we call this Miracle soup. The measurements are one of these sort of go by what you have kind of things. Also this comes together VERY fast, so there isn't much standing at all.

Miracle Soup

(Also feel free to adjust amounts depending on your favorite ingredients)

In a large stock pot saute:

1 lg onion, chopped
4 carrots, chopped
4 ribs of celery
4-6 lg gloves of garlic

Continue to saute until onion begins to soften, but not brown. Then add
2 large cans of chicken stock (1 quart size).

Bring soup to a simmer and add:
2 cans of stewed tomatoes
1 lg package (family size) of spinach tortellini

Stir ingredients through. Then add
1 bag of baby spinach.
Grated Parmesan (to taste)

Once the spinach and tortellini is cooked through your soup is complete. For a non-veggie version, you can also add cooked chicken.

Hi Deena,
One of my favorite cookbooks for great soup recipes (vegetarian) is Moosewood Daily Special. I have liked just about every soup I have made from the book, a great winter staple.
