here is a recipe for all you Martha's out there!

TOFU

1 cup soy beans
1 qt water
3/4 tsp epsom salt
1/4 cup warm water

Soak beans overnight. Next day liquiefy in blender until smooth. Squeeze out all milk, using clean cheesecloth. boil milk for 2 or 3 min. turn off all heat. dissolve epsom salt in warm water and slowly stir into milk. let milk stand undisturbed until curdled. put clean cheese cloth in colander.

Gently lift curd from pot and place in cheese cloth. Rinse under faucet if desired to remove any trace of salt. Put a bowl filled with water as a wieght to shape curd. In about 1 hour soy bean curd will be firm enough to slice. cut into squares. Store in fridge in a jar filled with water.

Thank you! This is COOL, I would have never known you could do this. I grew soybeans last year and will try this with the ones in my freezer! I will also share it with my sister who turned my onto soybeans! THANKS!! http://www.cookinglight.com/bbs/wink.gif

I did want to add that you need to change tofu water everyday when you make your own tofu. Otherwise it goes bad. (All the little tips I learned in the hippy commune http://www.cookinglight.com/bbs/wink.gif)
