Last night was some of the recipes from the 11/04 issue-Sunday Brunch Buffet.

Grits Casserole with Mushrooms, Prosciutto, and Provolone-this is excellent, almost addicting. I did half a recipe, which according to the recipe, should have been just enough for the 3 of us. We ate about half for that, so the portions were very generous. Not too time consuming if you do the grits part ahead. For half the recipe, I used 2 eggs and 1/2 cup Egg Beaters, instead of 1 1/2 eggs and 2 egg whites, otherwise I followed the recipe.

Fruit Salad with Honey-Yogurt Sauce-very good, but a fruit salad non the less. The lime zest did give it a nice little zip.

Whole Wheat Apricot Muffins-well, sort of. I didn't have dried apricots, so I used mango. Very good muffins, nice texture, good flavor, pretty, not too sweet, went well with the meal. A keeper.

Do you think this could be made without the mushrooms? I hate mushrooms, but the dish sound so good.

Sure, it would just be cheese grits, but good. You could also use some other sauted veggies on top. As I was fixing it I thought of red bell pepper and or sun-dried tomatoes, and maybe caramelized onions.

Bumping this up because I'm thinking about making this tonight. Does anyone know if I could sub ham or bacon for prosciutto? I don't happen to have any prosciutto at home. Also, do you think it would be too breakfast-y for dinner?

I think either ham or bacon would work just fine. Nope, it would make a great dinner (that's when we had it):D

Thanks, TerryTX. Forgot to ask - if I do sub ham or bacon, how would I do it. I've never cooked with prosciutto. For instance, would I cook the bacon first and then add or put in raw. Or, I have some diced, cooked ham, which I'm leaning towards using. Would I just put it in put watch the cooking time?

I would just stir it in where the recipes says to do the prosciutto and go from there.
