I made this yesterday and it was so easy and very delicious. It is in the reader's recipes section in the April edition.

This recipe caught my eye as well --- but is the fat content accurate?? 22.1g seems really high for a Cooking Light recipe. And, if it is right - what is it coming from? I compared it to other Salmon recipes and it is a bit higher. Is it the Tablespoon of Olive oil?

Those were my thoughts exactly!! The fat content seemed way too high for just the salmon and about 1 T of oil. If it is accurate, I will probably skip it just for that reason. Maybe I will e-mail Cooking Light to double check. I'd really like to try that recipe...

I'm fairly certain it's accurate -- the olive oil adds 7 grams of fat per serving; a 6 ounce fillet of salmon has at least 15 grams. That's a pretty generous serving, though... you could always have a smaller piece of fish.

Is this the one by Lorilei? The easy pesto salmon one? The "reader" in the Reader's Recipe was Lorilei. Someone posted it here on the BB a few days ago (I don't have the April issue yet). I put it into MasterCook and came up with the following nutritional info.

Per Serving (excluding unknown items): 274 Calories; 13g Fat (42.1% calories from fat); 36g Protein; 3g Carbohydrate; 1g Dietary Fiber; 88mg Cholesterol; 468mg Sodium. Exchanges: 5 Lean Meat; 1/2 Vegetable; 1 1/2 Fat.

This information doesn't include the brown rice.

I'm thinking that 13 grams may be too low for this dish; a 6 ounce piece of salmon has between 16 and 18 grams of fat -- then you have to include the 7 grams of fat for each 1/2 Tablespoon of olive oil per serving.

I will have to check how I entered this into my MC program. As I recall, I didn't enter a weight for the salmon, so the MC software assumed an "average sized" piece of salmon. Whatever that means.

I am still getting used to the MasterCook software, so maybe I screwed it up. I will check and re-check (when I get home from work http://www.cookinglight.com/bbs/wink.gif ). Did anyone else enter this into MaterCook? I really trust how they do their analysis, I just don't trust myself to put the ingredients in right all the time!

To be honest, I never paid attention to the fat content in this recipe - it tasted good, and was healthy. It had plenty of liquid with the chicken broth - I'm sure if you want to cut some fat, you could omit the olive oil.

Just returning to the boards from a short (but wonderful) hiatus, and happened to catch this thread as I was reading through things I'd missed...

I really haven't the foggiest clue what the fat content really is for this recipe, as I made it up one evening to use up a bit of pesto... However, I would like to mention something which might be all TOO obvious.

Yes, salmon has a bit of fat -- probably at least 16 grams. But I usually eat salmon without guilt, as it's so filled with GOOD fat!

I made this last night and love it! It was very easy to make. I halved the recipe because it was just me and added some basil infused olive oil, served it with asparagus and basmati rice.

I have been on a salmon kick lately and have bought a wazoo load from Costco (since last week's reassuring thread about what's best for you). I am having friends over for dinner next week and if they like salmon, I may be making this. Thanks Lori!!
