Here are two recipes from CL (can't remember what month or year) that I made last night (the salad is actually a varation of a CL recipe). My husband and I love the chicken and I have served the salad to others often and everyone loves it.
Oven-Fried Sesame Chicken
2 T soy sauce
1/4 t. salt
1/4 t. pepper
4 6-ounce skinned chicken breasts
3 T sesame seeds
Vegetable cooking spray
2 T flour
1 T reduced calorie margarine, melted
Place soy sauce in a shallow dish; add chicken, turning to coat. Remove chicken from soy sauce and discard soy sauce. Combine sesame seeds, flour, salt and pepper. Coat the chicken with the sesame seed mixture. Place chicken in a baking dish coated with cooking spray. Drizzle margarine over chicken. Bake at 400 degrees for 45 minutes or until done. Yield 4 servings: 223 calories. Do not use boneless chicken for this recipe. In order to get the sesame seed mixture to brown, you must bake it for 45 minutes. Boneless chicken breast are too dry if cooked for 45 minutes.
Strawberry Salad with Feta Cheese
When strawberries are not in season, I substitute chopped ripe pears for the strawberries.
1/4 C. sugar
1/4 t. paprika
2 T sherry vinegar or white wine vinegar (I use sherry vinegar)
1/8 t. salt
1 1/2 t. olive oil
1 t. minced red onion
3/4 t. poppy seeds
1 1/2 t. sesame seeds, toasted
6 C. mixed greens, romaine lettuce or fresh spinach
2 C. chopped strawberries
3 – 4 T slivered almonds or pine nuts, toasted
Crumbled Feta cheese to taste
Toast sesame seeds in a small sauté pan over medium, being careful not to burn. Combine sugar, vinegar, sesame seeds, olive oil, onion, poppy seeds, paprika and salt in a jar; cover tightly and shake vigorously. Combine the lettuce (or greens or spinach), strawberries, toasted almonds (or pine nuts) and Feta cheese in a salad bowl. Toss gently. Pour dressing over the salad mixture and toss gently.
