Made these for dinner last night too. They went extremely well with Gail's Psycho Chicken and that roasted broccoli posted here. The next time I make them I will add some garlic and maybe a little fresh jalapeno pepper but we all, kids included liked these as is. A keeper!!--Lisa

VERY YUMMY
These remind me of the potato cutlets my Pakistani friend makes, except hers are chock full of chile peppers and cilantro. I will definitely make these again and again. Next time, I will use more onion and yes, add some chiles. I ate mine without the tomato and onion garnish. These would be good for breakfast, too.

I'm taking you advice LRuben...tomorrow nights menu is Gail's Psycho Chicken, roasted broccoli, and the Ecuadorean potatoes.

LRuben, my family thanks you for the menu idea. We loved it all. The potatoes were so pretty, the chicken so juicy, and the broccoli was good and such a change.
