Just made Butterscotch Bars -- a chewy mild butterscotch "blondie" with butterscotch chips on top (I admit I used more than the recipe called for). Yummy and easy! Unfortunately, I can't give an issue date as I clip the recipes out of CL.

This is from jan/Feb 2000...here it is...so yummy!


BUTTERSCOTCH BARS

¼ cup granulated sugar
½ cup packed brown sugar

¼ cup butter or stick margarine
2 large egg whites
1 tsp. Vanilla
1 ¼ cup all-purpose flour
½ tsp. Baking powder
¼ tsp. Salt
cooking spray
½ cup butterscotch morsels


1. Preheat oven to 350.
2. Beat sugars and butter at medium speed of a mixer until well-blended. Add egg whites and Vanilla; beat well. Lightly spoon the flour into dry measuring cups, and level with a knife. Combine flour, baking powder, and salt; stir well with a whisk. Add flour mixture to sugar mixture; beat at low speed just until blended.
3. Spread batter evenly into an 8-inch square baking pan coated with cooking spray; sprinkle with morsels. Bake for 28 minutes or until a wooden pick inserted into center comes out clean. Cool in pan on wire rack.

Yield: 16 servings Cal: 142 Fat: 4.3 Fiber; 0.3 ww points: 3 per bar

I just made these tonight. Very yummy! I didn't read the directions at the end and mixed my chips into the batter. Oh well, they're still delicious! I don't see 16 servings in the pan though. http://www.cookinglight.com/bbs/biggrin.gif

I LOVE THESE!! I've been making these since that issue came out and I never get tired of them. There is always a bag of chips in my freezer. Surprisingly, I'm okay with the 16 servings. Usually, I can limit myself to 1-2 a day, too! They stay fresh all week.

What brand of butterscotch chips do you use? I like Guittard the best but they are hard to find so I'm looking for a good substitute.

I also love the Butterscotch Bars! I use Nestle (really wish Hershey's made Butterscotch chips!)Butterscotch chips. I always keep a bag in the kitchen in case of a-need-to-bake-emergency! http://www.cookinglight.com/bbs/smile.gif

These were very good! I used half chocolate chips and half butterscotch. (Sometimes you just HAVE to have chocolate!) I'm not sure how this effects the nutritional information, but mmmmmm.

Just pulling up this old post to say YUM! I made these yesterday (doubled the recipe and made a big pan). Luckily I brought them to work today, and the temptation is now gone!
