I am attending a party for my friend's daughter. It is a celebration of her First Holy Communion. I have been asked to make some "fancy" desserts. I am one of several people contributing to the dessert table for about 100 people. Any ideas for individual or "easy to eat" desserts would be great!

I've made tiny key lime pies before. They're cute & fancy looking.

In the current issue of Cooking Pleasures there are recipes for these neat "tulip cups" which are some kind of cookie typw thing made in a muffin cup and then filled with all kinds of different fillings -- moose, fruit, etc. I can't guarantee that they'll be light but if you are interested I can look them up for you when I get home from work.

The butterscotch-amaretti parfaits in Jan/Feb '01 (I think) look fabulous. I've been dying to try them, but still no luck finding amaretti cookies.

Leanne,

The tiny key lime pies sound great! Do you have a good recipe that you wouldn't mind posting? Thanks!

Small tarts of any kind are usually good. You can make them with different fruits on the top, so that there is a choice.

How about doing some chocolate dipped goodies? Strawberries would be a great hit as would pretzel rods. White and dark chocolate with maybe some pretty colored sprinkles? (There will be kids too, right?)
Cream puffs are always wonderful. I like the ones shaped like swans but would have no idea how to make them.
I think the Buttercrunch lemon bars would be good. Put into individual paper cups, garnish with a mint leaf and a raspberry.
I also have a recipe for chocolate raspberry mousse brownies. If you want it I can post it this evening.
Good luck and enjoy!

Angie94, the butterscotch parfaits are wonderful and such a pretty presentation! I actually had a hard time finding the ladyfingers, but I finally did. I found the amaretti cookies at a speciality coffee kinda place so you might try there. They were quite expensive ($10 per container) but fortunately they also sold them individually for 65 cents a piece. If you can't find them locally, let me know and I'll be happy to mail you a stash of them http://www.cookinglight.com/bbs/smile.gif

My mom always makes what we call "Little Cheesecakes" for large parties. I don't know where the recipe originated from but it is really easy and very tasty--who can say no to cheescake? Basically you fill muffin cups with a vanilla wafer and top with cheesecake mixture and bake. You can also adorn it with your favorite topping; a raspberry, a marachino cherry and whipped cream, basically your imagination and taste are your guide.
Let me know if anyone is interested in this recipe and I can type it out and post it.
Either way, enjoy the party Leonard!

Well, no real recipe - but here's what I do:

Any recipe not calling for eggs will work - and actually, one that does probably will too - but it's more trouble & I wouldn't know how to adjust the cooking time.

I bought pre-made mini pie crusts / candy cups - I've used graham cracker & chocolate cups - both were good. You can also make a standard graham cracker crust recipe & put it in mini muffin pans.
Then I just followed the directions on the back of a bottle of key lime juice (they all have them). It's really easy - something like the juice, condensed milk, & sugar. You mix, then pour into the crusts. Refridgerate until you're ready. I got one that didn't call for eggs so I wouldn't have to bake them.
I topped with a small layer or dollop of whipped cream & a sprinkling of lime &/or lemon zest. I've also left them plain on top - no whipped cream or zest - still pretty & tasty.

If I have a bottle at home, I can tell you what brand of lime juice I always buy. I'll look tonight, but I don't think I do. The bottle has a mostly white lable with alot of light blue in it - maybe with a patio scene on it? I'm sure that didn't help at all. http://www.cookinglight.com/bbs/smile.gif Oh well. You get the idea - sorry I don't have an actual recipe to post. They're so easy - even when you're doing it for 100 people.
