Hi everyone, my neighbors and I are taking a dinner tomorrow to a new couple that moved in our neigborhood this week...One of the neighbors is making a baked chicken dish with pineapple and Russian Dressing? I have the assignment of side dish and was thinking of doing a rice dish...does anyone have a good recipe to share? I am not sure what to take, but don't want to make plain old white rice... http://www.cookinglight.com/bbs/smile.gif thanks everyone!

Sounds like a sweet and sour chicken recipe that my sister makes....

Almond-Rice Pilaf

Amount Measure Ingredient -- Preparation Method

4 cups hot cooked rice
1/4 cup sliced green onions
2 tablespoons sliced almonds -- toasted
1 teaspoon low-sodium soy sauce
1/4 teaspoon salt

Combine all ingredients; toss well.
