View Full Version : Has anyone tried Artichoke and Spinach Pizza (July/August 1999?)

I have three cookpacs here that I was looking over, and this seemed interesting. To jog your memory, it is a sauce-less pizza with canned artichoke hearts, frozen spinach, ricotta and provolone. I wasn't able to find any reviews in the archive.

I have made this recipe twice and it is good. You have to really like spinach, though...very "spinachy". The second time I made it, I used the marinated artichoke hearts instead of the plain. That spiced it up a bit. I would recommend it. A very healthy pizza recipe.

we liked this pizza - we've made it a couple of times. i usually heat some tomato sauce on the side for dipping, since we thought it was a little bit dry.

I have made this a few times and really liked it. The first time I made it I had one piece and my husband ate the rest!
I have served it to guests and they enjoyed it as well. It is really quick and easy to make too.

I thought it was okay. It was definitely easy. I've just had better CL pizzas like the basil, spinach, shrimp pizza blanco and the red pepper pesto pizza which is very, very easy. I thought that those two had more flavor.

Would someone mind posting the recipe and nutritional info? I couldn't find it in the recipe finder, but it sounds great! (I'm always looking for new pizza ideas!)

Here is the recipe you requested:

Artichoke-Spinach Pizza

1 cup part-skim ricotta cheese
1/4 cup thinly sliced green onions
1/4 teas bottled minced garlic
1/4 teas dried oregano
1/8 teas black pepper
1 (10-oz) pkg frozen chopped spinach, thawed and drained
1 (1 lb) Italian cheese-flavored pizza crust (such as Boboli)
1 (14oz) can quartered artichoke hearts, drained
2/3 cup (2 1/2 oz) grated sharp provolone or shredded part-skin mozzarella cheese

1. Preheat oven to 450 degrees.

2. Combine first 5 ingredients. Stir in spinach. Place crust on a baking sheet. Spread spinach mixture over crust; leaving a 1/2-inch border; top with artichokes and cheese.

3. Bake at 450 degrees for 13 minutes. Yield: 8 servings (serving slice: 1 slice).
