Hi all,
Does anyone have or can help search for a CL recipe that was salmon atop lentils?
I've tried searching the BB and have a terrible time with it. I tried to search the CL website as well and it's not there.
If anyone can help, it is greatly appreciated!!
thx!

-------- ------------ --------------------------------
Lentils:
3 cups water
3/4 cup dried brown lentils
1/2 teaspoon salt, divided
1/2 teaspoon olive oil
1 cup chopped onion
1 cup chopped seeded tomato
2 1/2 tablespoons red wine vinegar
2 tablespoons chopped fresh basil
1/4 teaspoon black pepper
2 garlic cloves, minced
Salmon:
2 tablespoons all-purpose flour
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon dried thyme
4 salmon fillets (6 ounces, each; about 2
inches thick), skin removed
1 teaspoon olive oil
1. To prepare lentils, combine water, lentils, and 1/4 teaspoon salt in a medium saucepan. Bring to a boil; cover, reduce heat to medium-low, and simmer 20 minutes. Drain; set aside.
2. Heat 1/2 teaspoon oil in a large nonstick skillet over medium-high heat. Add onion; saute 5 minutes or until lightly browned. Add lentils, 1/4 teaspoon salt, tomato, vinegar, basil, 1/4 teaspoon pepper, and garlic; toss gently.
3. To prepare salmon, combine flour, 1/4 teaspoon salt, 1/4 teaspoon pepper, and thyme. Sprinkle fillets with flour mixture. Heat 1 teaspoon oil in pan over medium-high heat. Add fillets, and saute 6 minutes on each side or until fish flakes easily when tested with a fork.
4. Divide lentils evenly among 4 plates, and top each serving with a salmon fillet. Yield: 4 servings (servings size: 3/4 cup lentils and 1 salmon fillet).
