View Full Version : Can you freeze ricotta cheese?

I made Pasta Rustica a couple of days ago and now I have half of a container of ricotta cheese left. I don't want to throw it out and won't be cooking for several days. Can I freeze it? And if so, how?

I have before, not on purpose though. The texture will suffer some and there will be some liquid that you need to stir back in that separates. I used it in a lasagna and it seemed just fine. It isnt something I would normally do though.
