View Full Version : Can I Freeze a Mousse Cake?

I would love to try the December BA cover recipe for my Christmas Eve dinner. It is a Milk Chocolate Mousse Cake with Hazelnut Crunch Crust. The only way I could possibly pull it off would be to make it a few weeks in advance and freeze it. Do you think the mousse layer would be okay?

While I'm asking, I am also going to make the CL mini peppermint cheesecakes for the same dinner. I'd love to make them in advance as well. I think cheesecakes are okay to freeze, right?

It would be wonderful if I could get my act together to actually have my desserts made ahead of time, tucked away in the freezer until the big day.

Cheesecakes freeze really well. I've saved pieces of cheesecake only to find them tasting just as good a couple of months later.

As for mousse cake, I have never frozen one, but have seen frozen mousse cakes before. I "think" you should be safe on that one, but I hope someone else who has actually done so can confirm this.
