Can anyone suggest a light - and somewhat simple - chicken noodle soup recipe - from CL or elsewhere?? I know of one recipe from a Jan/Feb 98 or 99 issue, but I don't know whether it's any good...

Thanks! My poor fiancee is ailing, and I've yet to learn to make his mom's chicken soup http://www.cookinglight.com/bbs/smile.gif

I saw this one on tv and it looked nice
OLD FASHIONED CHICKEN SOUP
Recipe Courtesy of Cathy Lowe
2 tablespoons olive oil
1 onion, chopped
3 carrots, sliced
2 stalks celery, sliced
6 cups water
1 chicken, quartered
1/4 cup chopped parsley
1 cup small egg noodles
Salt
Pepper

Heat oil in large heavy pot. Cook onion and celery until translucent. Season chicken pieces liberally with salt and pepper. Place chicken skin side down in pot and brown, about 5 minutes. Add carrots and cover with water. Bring to a simmer and cook for 1 hour. Remove chicken from soup and let cool. Remove meat from bones and shred, discard skin. Return meat to pot and stir in parsley and noodles. Cook for another 20 minutes.

Yield: 4 servings
Prep Time: 10 minutes
Cooking Time: 2 hours 0 minutes
Difficulty: Easy

Would someone post this recipe. I have only issues of Oct.99, Nov.99, and Dec.99.

"chock-full chicken noodle soup" CL- sept 99 is the best soup i've ever had!!! and i use canned broth! the potato and spinach are the secret ingredients and big, fat frozen egg noodles are KEY!!!
