View Full Version : Spinach Souffle recipe??

I've been told to "bring something green" for Thanksgiving (along with a few other dishes). I think a spinach souffle would be nice (or I have a tupperwear container waaayyy in the back of the frige that is definitely full of "something green" :eek: ) -- any tried and true recipes from my favorite cooks??? Thanks in advance.

This one looks good, though I haven't made it. It was posted on the Thanksgiving 2004 thread.

Spinach and Gorgonzola Souffle

1 10 oz. package frozen, chopped spinach, thawed but undrained
1 16 oz. container small curd cottage cheese
4 oz. Gorgonzola cheese, crumbled (about 1 cup)
½ cup butter, melted
3 T. flour
5 large eggs, beaten to blend

Preheat oven to 350. Butter 6 to 8 cup soufflé dish. Place spinach in a large bowl. Mix in cottage cheese, Gorgonzola, melted butter, and flour. Season to taste with salt and pepper. Add eggs and stir until blended. Transfer to prepared dish. Bake until spinach is set in the center, about 1 hour and 15 minutes. Let stand 10 minutes before serving. Tastes great at room temperature too.

Thanks! Not only does it look good, it doesn't look as "delicate" as some of them do . . . I had visions of having one collapse on the way to the hosts' home.
