i am planning to make the white chocolate cheesccke for dessert for easter dinner. the recipe calls for 3 cups of fresh rasberries and was wondering do u guys think i could substute frozen ones. I am not sure the store would have fresh ones. Maybe wildoats has them fresh. any tips would be great. thnks Matt

Matt, if I were you I'd call the grocery store and check. I was in my grocery store last night and there was some in there. I was definitely surprised because I live in Arkansas and didn't really expect to see them this early.

You can subsitute as long as they are being mixed and strained. If they are for garnish, or used whole, then I would not substitute with frozen.

Matt,
I made this cheesecake w/fresh raspberries, last year for Easter, it was very good! the only thing i remember is the raspberries made the crust a little moister then other cheesecakes I've made, so I think the frozen raspberries will make the crust even moister as they defrost while cooking. Just my opinion.

Matt, let us know what you ended up using -fresh or frozen - and how it turned out. I thought of you at the grocery store this morning as I saw a very small container of raspberries for $4.99 http://www.cookinglight.com/bbs/frown.gif!!!
