Hi everyone,
My MIL gave us some apples (red) which I am not a fan of and my DH sometimes likes...what can I do with them? I know they are probably not as good as a tart apple for cooking, but what else can I use them for?

I don't know how many you have, but here is a recipe for Cranberry Relish that contains a few apples and I use regular red apples.
Cranberry Relish
1 1/2 C. fresh orange juice
2 C. raisins
2 C. sugar
3 apples, cored, peeled & diced
2 T. grated orange peel - fresh
3 pears, cored, peeled & diced
3 t. cinnamon
2 - 12 oz. packages fresh cranberries
1/2 t. nutmeg
1/2 C. orange liqueur (Grand Marnier)
Wash cranberries. Combine all ingredients in a large pot except orange liqueur. Heat till it boils at medium heat. Stir occasionally throughout process. Reduce heat to a simmer and continue cooking until cranberries pop, approximately 15 to 20 minutes. Remove from heat, stir in liqueur. Refrigerate in jars. Serve chilled with all kinds of grilled meat or fowl.

Appetizer Fruit Cocktail
2 cups apple juice
1 tablespoon lemon juice
1/2 teaspoon grated orange or lemon peel
dash salt
2 (3-inch) cinnamon sticks
2 (about 3/4 lb.) Red Delicious apples, cored and diced
1-1/2 cups diced fresh pineapple
1 orange, peeled and sectioned
Combine apple juice, lemon juice, orange or lemon peel, salt and cinnamon sticks in saucepan. Bring to boil and simmer, uncovered, 10 minutes. Cool slightly.Remove cinnamon sticks. Combine apples, pineapple and orange. Pour syrup over fruit and chill.
Cha Cha Cha Salsa
3 medium Red Delicious apples, cored and chopped
2 (4-ounce) cans diced Green Chiles
1/2 cup raisins
1/2 cup thinly sliced green onions
1/3 cup cider vinegar
3 tablespoons brown sugar
1/4 teaspoon ground cumin (optional)
Combine apples, chiles, raisins, onions, vinegar, sugar and cumin in medium bowl. Cover and chill at least 1 hour. Serve with grilled chicken or pork.
Smoked Turkey, Apple and Pecan Salad
4 cups torn chicory lettuce
4 cups loose watercress, stems trimmed
2 cups Belgian endive, cut lengthwise into thin strips
12 ounces smoked turkey, cut into thin strips
2 Gala or Red Delicious apples, cored and cut into 1/4-inch thick slices
1/2 cup toasted pecans
4 ounces gorgonzola or blue cheese, crumbled
1/4 cup olive oil
1/4 cup cider vinegar
2 teaspoons Dijon-style prepared mustard
1/2 teaspoon salt
1/2 teaspoon ground black pepper
In large bowl, combine chicory, watercress, endive, turkey, apples, pecans, and gorgonzola. In small bowl, whisk together oil, vinegar, mustard, salt, and pepper to make dressing; pour dressing over salad mixture and toss well. Divide salad mixture evenly among serving plates; serve immediately
Caramel Apples
1 bag caramels
2 tablespoons water
Red Delicious Washington Apples
Handle sticks
Melt the bag of caramel and water in a microwave pan. Microwave on high for 3-4 minutes. Or, allow about 20 minutes to melt caramels in a 1 1/2 quart saucepan over a conventional rangetop. Stir caramel gently with a wooden spoon when it starts to melt. Wash and dry the apples thoroughly. Incert handle sticks in top of apple and remove excess juice on the apple. Dip the apple in the caramel, place on waxed paper and chill in refrigerator.

My favorite fall and winter salad includes apples. Sorry I don't have exact measurements - I just wing it.
Combine on a salad plate:
Lettuce or salad greens of your choice
Apple slices
Raisins
Chopped toasted pecans
Crumbled gorgonzola
Serve with fat free raspberry dressing (I use Ken's fat free Raspberry Pecan but I'm sure homemade would be tastier).
If the salad is going to sit for a while before serving, I dip the apple slices in a bit of pineapple juice to keep them from turning brown.

We found that RD apples are very good for drying (dehydrating). We probably go through a bag every other week making apple chips.

Andrea, how do I dehydrate apples? Do I need a dehydrating gadget or can I do it in the oven?

As for dehydrating, we do have an electric dehydrator (Magic Chef, about $20 or so at WalMart and it works just fine). As for using an oven, my dad used to do it all the time with these trays which had wooden frames and a mesh-type screen. I do know that you use a pretty low heat setting. I wonder where you can get those trays... anyone have any ideas?
